Regarding the curry dish, it’s probably more likely to be an indian curry compared to chinese curry (since he mentions it coming in a wok or smth)? I’m actually not really sure what he got since it’s probably from a mall near Little India.

i think the "black soup" he's talking about in 1:21 might be SE-Asian black sauce?? it's a sweet sauce typically eaten with bak kut teh and other meat soups and is commonly found in the region. Hope this helps!

The picture of bak kut teh at the start is more representative of Malaysia's which is more herbal and dark in color.
Singapore's version is far simpler - the bowl usually served with just the meat and garlic.

The sauce Uyu-san mentioned should be Dark Soya Sauce. We use it often as a sauce with sliced chili for soups, noodles, chicken rice, etc.
About the shopping mall's curry dish, I can only guess from the price and nearby mall. The dish is either meat curry (could be chicken, mutton), tikka masala or butter chicken. lol
