The Net Carbs:Fiber doesn't work in my real life examples. For instance the nutritional facts of quinoa are: 39 grams of carbs and 5gr of fiber (ration of 8:1). Kamut the same. Could you explain it more please? Thank you :)
Thanks for the question! It's true, it does not work for various intact grains. But you don't have to worry about intact grains! The 5 to 1 rule is best used for processed grain products, like bread and cereals. (Pasta is similar to the intact grains and won't reach 5 to 1, but maybe a 7 to 1 rule could be used!?) Here are some real life examples: Bread with 48g net carbs and 2.7g fiber versus one with 38g net carbs and 9g fiber. Cereal with 60g net carbs to 9g fiber versus 60g net carbs to 13g fiber. It will be easier to find intact ancient grains than ancient grain flour, both might also be found in organic stores or on organic shops on the internet. I can't help you find a specific store near you, sorry. We make intact grains in a pressure cooker, we directly add potatoes and use various spices. Then add some vegetables a nice sauce, and you'll have an easy and super healthy meal!
