This man is speaking the truth. I have used both Dexter fillet knives and a Worksharp (Ken Onion edition) for years and both are the best at what they do.
Dexter knives are nice, but the Worksharp knife sharpener is great. All my friends can't believe how sharp my knives are, and now they bring theirs over to get sharpened. 👍
I just recently picked up a Dexter Basic 7" fillet knife at West Marine after comparing inexpensive to way pricey. I just started learning to fillet on trout. So far, love the Dexter. Will likely pick up a couple more different sizes and tools. Liking the brand so far!
I have the same sharpener. My plastic guide cover hits the belt. It is a awesome sharpener. Thanks for the video. Oh how is the new house coming a long. Stay safe
You may already know this but there is a knob on the arm that holds the belt tensioner and you can rotate it to center the belt...I had a similar issue and once I messed with that, the issue went away. I put the belt on and then run the motor and adjust the belt while it's running and get it dead center of the roller at the top and everything works perfect. Hope this helps.
I use a knife sharpener called "WorkSharp" it has been the best knife sharpener I have ever owned. It's tough on your blades, BUT it keeps a razor edge on even my cheapest knives. We did a video on it we like it so much and we have bought several as gifts for family and friends. It's a good one. Here's the video: th-cam.com/video/Oxw4NW6V2F4/w-d-xo.htmlsi=a-omQ-OdWI3a-2Ja
Dexter does it right because they make commercial grade equipment for commercial kitchens. Never find a better spatula.

However, I would like a recommendation on a sheath..? Thanks.

What butchers and fishmongers use. You will never see them use crap like Bubba.
Best know we own, 2 of them makes for a perfect backup.
