One spice to add to the beans while cooking is ground Asafetida. It is an Indian spice that takes away the gas byproduct from the beans. All you really need is a pinch.
Add asafoetida to your a pot of lentils or beans with one of these two methods:
1. Sauté a pinch of asafoetida in your preferred fat over medium heat for one to two minutes (until it smells onion-like), then stir in the water, legumes, plus any extra ingredients and cook.
2. Cook your legumes as desired. In a separate small pan sauté a pinch of asafoetida in your preferred fat over medium heat for one to two minutes (until it smells onion-like) then stir into your pot of beans or lentils.

Another thing you can do is take a non-slotted spoon and mash the beans up against the wall of your cooking pot to give it some thickness. My ex mother-in-law taught me to do that when she cooked her Cuban black beans and they were always amazing.

I just made a pot of Camellia Red Beans Monday. Yes, soak the beans overnight. I follow the recipe on the back of package. That’s the brand and flavor of sausage I use for my red beans. Also, I add liquid smoke.

recommend taking out half your cooked beans, pulse a couple times with your blender then add them back to the pot. Makes them creamy and closer to real New Orleans red beans and rice.

I love making this when i have people to share it with. Was a wekly tradition my whole life and then until my son moved out. Just made a big batch in my instant pot on monday. I usually make beyond sausage which also pairs incredibly well and crumble whatever is left after dinner into the red beans. Delish. I also have a bay leaf tree in my back yard!
This is not traditional, but i usually add a carrot to my trinity. My moms bayou born and raised bf says mine are the best he has ever eaten. Total pride moment for me on that one. He is far from vegan and still thinks fish is vegan. Always wants to send me home with some.

My introduction to Red Beans and Rice was when I was at an IBM Common User's Group conference in New Orleans. I asked a local at the conference where was a good place to eat and it was Monday so he said I had to have Red Beans and Rice and he recommended Mothers. Over the years I have made it quite a few times and I even made it for my grand children (toned down a bit) and they loved it. I look forward to trying your recipe. On Beans and Rice, combined they deliver the complete set of necessary protein amino acids. My recipe differs in that it has Italian canned tomatoes and a bit more heat as I through in some chipotle. I had an optional ingredient, really smokey bacon, but I like the idea of a vegan sausage which are available up here in The Great White North. I am going to make that tomorrow night. Personally I always thought Kidney beans were one of the easier beans to cook, where as Black Turtle beans are one of the toughest (though I got that one down pat now) beans to cook. Thank you for your recipe.

I’ve always liked the sound of the food from this region, but I’ve only seen huge portions and loads of meat and additives, etc. so I knew I wouldn’t be able to digest the food! However, your red beans and rice look and sound amazing - I’m off to soak some for tomorrow 😊
I always cook my beans after overnight soaking for the same reason as you do - they do taste more creamy and rich. I also add kombu to the pot because I feel a vegan needs to make sure of getting lots of micronutrients in an intentional way.
There was so much helpful advice that I’ve just subscribed- I look forward to more delicious recipes! Thank you for keeping it calm (I hate lots of shouty stuff and too loud music😢) and relevant to modern living.

Red beans can be replaced with any other bean. And rice can be replaced by bulgur, millet, quinoa, polenta. Vegan cooking is easier than you think. And those processed sausages are not necessary. Just add some different vegetables to the beans, like leek, spinach, kale, chard or any other vegetable that is in season. Keep to the seasons!

Do you use the Camelia brand of beans? I've used them once before because they're supposed to be the ideal for RB&R, and I soaked them, but they fell apart. Any advice? Btw, I adore your cookbook, and I've used it for ages and enjoyed everything I've made!
I do use Camelia! Hmm, I've never had that issue. It's possible your beans were older, but I'd contact the brand if you keep having issues with that particular type of bean.

Absolutely you can! You may need to adjust the water amount since this recipe is for uncooked beans that will end up soaking up the water. Start with less and add more water as needed.
I can eat red beans but not I can't eat pinto beans. This recipe was too good. I gave some to my neighbor whose from New Orleans and she was amazed that the fish was vegan. Delicious.
The sodium in the field roast is very high. Any suggestions for substitutions?
I linked to a sausage recipe in the video/description, and I have another homemade recipe in my cookbook! For store-bought, just check the sodium content and use whatever vegan sausage you like, but I recommend something similar in flavor to what I used here or vegan Italian sausage.
Great video!! For those on Weight Watchers, this recipe without rice is almost zero points. Video doesn't have measurements but I'm going by sight. I got Salvadorean red beans, that's all the store had. Cooked for 2 hours, still not edible. What went wrong?

Feijoada is beans (usually black or brown) with bacon, sausages and usually pig parts. As vegans, we replace it with vegetables such as potatoes, sweet potatoes, carrots, smoked tofu, vegan sausages, seitan, mushrooms, etc. In Brazil, rice and beans are the basis of most everyday dishes and feijoada is normally eaten on Wednesdays and at the weekend.

good advice at the end in dealing with gassiness from beans. I've been vegan for 50 years and we need to learn how different foods affect our bodies. We need to learn how much to eat also. My problem with delicious food is eating too much of it. I could handle it when I was younger and was never overweight, but as I get older I eat a lot less yet still have plenty of energy due to eating healthy food, exercise, fresh air, and a happy outlook on life.
