I didn't feel like the apprentice was eager to fight the elder. It was more like he was more like eager to help the master and search clues and he just engaged in the battle because he didn't have any other option. Apprentice is a guardian so he was more likely to fight and rely on his fighting skills as he isn't so close to the force and doesn't have the experience that his master has.
Ah, the throwback to old school Gainax. If you never watched Gunbuster or Diebuster, this is that style. And the story is very nostalgic to me, reminds me of the old Jedi Apprentice books I read back when I was a kid.
Qui-Gon used Form IV, which was Ataru, not Shii-Cho (which is Form I). Tajin Crosser (the Jedi pictured) uses Form V based on the opening stance, though his fighting style is much less choreographed and more realistic so it isn’t as aggressive as actual Form V.

That fight was one of the realistic looking swordfights I saw in the starwars universe ☺👍
