Royal Icing
3 eggs whites room temperature
1 pound powdered sugar (confectioners)
1 teaspoon cream of tartar
Combine ingredients, beat at high speed 7-10 minutes.
Dries quickly-keep covered.
DECORATING BUTTERCREAM
2 CUP SHORTENING (SWEETEX)
1 CUP MILK (CANNED MILK IS GOOD)
2 TSP VANILLA
1 TSP. ALMOND EXTRACT
½ TSP.BUTTER FLAVORING
3 LB. POWDERED SUGAR
2 tsp. salt
Mix together and beat 10 minutes until light and fluffy it
will keep in refrigerator for about 2 wks. Is enough
to ice and decorate an 8 or 9 inch double layer cake.
You can cut the recipe in half if you don't need that much. In this video I am using Pastry Pride Whip Topping. It can be found at
most restaurant supply stores and Cake decorating supply stores. Riches Buttercream is also a good option.
Im glad to see that mishaps can happen even to professional cake decorators and its not just me my husband always tells me I should just give up on making cakes because I am always having to adjust or redo if something messes up or falls off or breaks and I really get discouraged because I am self taught and of course I've learned from amazing ladies like you that have easy to follow tutorials to go to for help and ideas its nice to hear someone say its one of those things that happen that you have to learn to improvise makes me feel a little better by the way I always love watching your tutorials thank you so much for taking the time to do them
OMG! it happens to me almost every time! It's the nature of working with so many variables like icing consistency, tempurature.....etc. It's amazing it ever comes together :)Keep going! and send me photos!

I had a hard time finding a Jumbo Muffin, so I made a Jumbo Cupcake to use. I sliced the top off and turned the cupcake upside down and did an Angle Cut for the Chocolate Square Top. It worked out. My 1st time for doing String Work for the Tassel, it wasn't as hard as I thought it would be. Thank You for your Videos, I am learning a lot!

Hi Lisa, In this video I am using Pastry Pride Whip Topping it is a frozen liquid product that you whip. It's found at restaurant supply stores, here it's at smart and final. Hi Karina, In this video I am using Pastry Pride Whip Topping, but yes I used the same Icing for the tassle that I am using for the rest of the cake. Buttercream will work great for this as well. THanks

Hi Marissa, that's great! I encourage you to learn all you can and practice a lot, then go for a cake decorating job. You will learn a ton about the business this way, apprenticeship is the best way to get the experience you need.
