    Nice interview and shop. I think I really would enjoy doing something like this, as a custom operation on my farm, it is nice to get someone’s perspective that is working as a butcher. Take care.

    Matt, I am new to this stuff and need a little advise on my next step. Continue with the processing or throw away? I harvested a deer in December. Skinned and quartered and put in a dedicated refrigerator in an open garbage bag at about 34 Deg. F for 10 days. Cut all of the meats into pieces I wanted. Covered it all up with saran wrap in stainless steel pots an bowls. I didn't get a chance to Vapor Bag Seal them. Another 2 weeks went by (still at 34 Deg. F.) due to being sick with covid. Decided to freeze all of it and it has been frozen for about a month. Can this still be eaten? Thanks.

      Hey Dennis! Thanks for the question. I would say thaw a little bit out and see how it looks and smells. From the sound of it, it seems like it’s definitely on the later end of its shelf life. If I were to cook it I’d braise it all too. But see how it looks and smells first. 👍👍
