Hi mam. Tried this yesterday. Came out little hard and leathery dosas. After that I added a pinch of baking soda. It came out perfect as you said soft and spongy.
I had a doubt regarding the batter gets rot smell due to the fresh coconut we are adding it in before day. But it's wrong belief. Came out so tasty, flavorful.
I enjoyed with peanut chutney and onion kaaram.
Must try recipes for those who love coconut

Thank you for the recipe. With some difficulty I understand Tamil but was able to follow your instructions quite well.
Can youp please tell me why we have to add the rice paste to the batter? I think you call it kappi. What happens to the batter when we add it...or if we skip it.

    • @KeralaSamayalinTamil
      @KeralaSamayalinTamil  3 ปีที่แล้ว +1

kappi gives softness to Appam.. instead you can add some cooked rice.. like 3/4 cup.. both gives softness to appam

I followed another recipe and they showed Aapam very soft even in Aapam pan. The key is to use little to no oil when you grease the Aapam pan or it will crisp it. Some of mine came out crisp when I used more oil so I realized it was the oil.

      Thanks a lot..💖😊
      Ingredients
White Raw Rice - 2 Cups (240 ml cup)
      Grated Coconut - 1 1/2 Cup
Rice wash 3-4 times and soak for 5 hrs minimum.. then grind
Take 2 tbsp of batter from this and add 3/4 cup water to the batter, then boil to make a thick paste.. Later will add this to grind batter..
Add coconut to the remaining batter in the Mixie.. grind well.. Batter should be very fine, soft and smooth.
Once batter is ready, add the boiled mix to this and mix well
Batter consistency should not be too thick or watery.. check video pls..
keep the batter for over night or 8-10 hrs.. but it depends upon climate..sometimes batter will not fermented in Cool climate..
Once perfectly fermented, add salt 1 Tbsp Sugar (Approx) to balance the batter sour taste..
for making Appams you can use nonstick Tawa or Kadai too...
NOTE:- Batter Should not be Hot while grinding... !!!
you can add the Coconut water while grinding
      That's it...
      Happy Cooking... !!
