You're doing Indian food justice by taking chances yourself and enjoying the food how it's meant to be eaten...normally a sloppy mess on a plate and/or some side plates. They should've included both chutneys for both the samosa and the papdi chaat. Dosa and sambar and coconut chutney is the bomb. Some stuff like Ras Malai is eaten with fork or spoon so that you can get the liquid in each bite, but not necessary. Same for gulab jamun. The more you eat rice with curry and/or meat by hand, the more deft you get until it's a natural motion where your fingers only just barely graze your lips. Anyone can get it down, just like a free throw. Great, sincere content, bro!!
