  • Over the last decade, lots of top chefs have started to use the Dexter breed in restaurants and on cooking shows.
    I've never tasted Dexter beef before, and I wanted to know what all the fuss was about.
    In this episode I test Dexter beef rump and New York Strip against USDA Prime and Welsh Black.

    We actually raise grass fed Dexter Beef in South Georgia. Every time we get our 1/2 of steer we are truly wowed by the taste of this beef! Ours is aged for 21 days or a few days more by our butcher. The steaks are just incredible with a rich taste. We are so blessed to be doing this as a side business. Small scale not big scale. The hamburger is really good also along with the roasts. I will say if you like your steaks well done with Dexter steaks you dry them out too much for well done in our opinion. Medium is perfect with some red in the middle.

      How heavy are your steers before and after processing them, And around what age do you process your steers? Just wondering as i was thinking of doing some dexter cattle down here in texas

      We have Dexters in Southern Missouri...our first steer is about to go to butcher! We are excited to say the least, we also give each animal a couple pounds of grain a day to ensure they are getting the complete amount of nutrition as we improve the soil and pasture health...should we expect heavy marbling or just a thicker cap of fat?

    Nutrient density of the meat and fat is an important aspect as well.

    There are conditions that will change the flavor...feed, age of animal, hang time, using a su vide would level out cooking time and temp....

    was this dexter grass fed? as in no grain at all

    Your method of taste testing is so confusing, I lost interest. I have worked for the largest food company in the world and have done thousands of taste tests.
