      Also works great when you have to manually whisk a large bowl of stuff. Just create a cradle with the wet rag and it'll hold the bowl in place.

    I'm a former ARMY cook, safe to say I've chopped tons of onions (literally, maybe?). Put the onions in a bowl with ice water for 5-10 minutes, or refrigerate overnight, before cutting. That always works for me.
    I've tried the "dont cut the root end" method and found it to be hit or miss.
    Thanks for the reviews! always fun to watch.

      @uspockdad6429 11 หลายเดือนก่อน +5

      Yeah, the root thing is an old wives tale. The best thing is to use as sharp of a knife as possible. Sharper knives damage fewer onion cells, which is what produces the gas in the first place. Methods mentioned here is the best option if your knives aren’t too sharp.

    • @christopherjunkins
      @christopherjunkins 10 หลายเดือนก่อน +1

      Yea, the best thing is a very sharp knife. But the issue with the cold onion method is that onions warm up as you are working through that... unless you're quick. Then there's the fact that there's a reason the leave the root on thing happened... and it's not to prevent tears. It's the fact that you leave the root end on to keep it from falling apart as you slice into it and then cut across... you will throw away the root end anyways, so just leave it on until you get down to it and then toss it... the crying part I'm willing to bet comes from chefs crying when you don't do this ... lol. Either way, Googles should work if you get a darn good seal... though if you don't get that seal, then it's pointless it will get in there if you're doing enough. Vapors get through the tiniest cracks.

    Chef's cut carrots quickly because:
    A) They use a knife that's better suited for cutting things like carrots
    B) Lots of practice.
    C) "rock chop" or "straight chop" motion - aka the tip of the blade stays on the cutting surface and all you're doing is pushing the back of the blade down to cut. For "rock chop", you're pushing the blade forward slightly as you push down and all you move is the carrot.
    If you weren't using a paring knife, you'd have more success "flying through carrots".

    • @shorttimer874
      @shorttimer874 11 หลายเดือนก่อน +4

      And while he has his fingertips tucked in, he doesn't have the blade against the finger joints, which quickly controls the size of the slices by sliding the guiding hand back along the carrot.
      Edit: also a damp paper towel under the cutting board stops that sliding around problem.

    The very first onion chopping method is how I always cut onions! And, along with that, I do a trick my mom taught me: rinse the peeled onion under cold water and dry off. Then cut. Or you can cut it in half thru the root THEN rinse both halves. The idea is that you want to rinse some of that onion juice away first. It seems to help and it works for me!

      I cut both borders, cut in half and then immediately rinse in water before chopping. Always does the trick. The water washes away the juices before they evaporate. Keeping the onions in the fridge helps too for the same reason: the juices are colder so they don't evaporate so fast.

And as for the goggles, as long as you don’t mind looking like a dork you could use an inexpensive diving mask, which would have a tighter seal around your face and be usable for other things.

    The dollar tree sells thin flimsy cutting boards which are brilliant. Put a paper towel to keep it from sliding around. When ready, just pick up the ends and the chopped items slide down into your bowl. They last forever so we have several including one designated just for meats.
    I never knew the onion trick of leaving the root ball on. Thanks for teaching me something new. And for people with carpal tunnel or arthritis it's very difficult to hold onto a carton. That handle would come in handy. Sadly though it is very expensive for the ones who need it.

    The cutting board has been around for a few years. I saw it on the review part of a talk show and eventually found it in Walmart for a decent price. It was bright green with non-slip strips and very stiff. The stiffness made it hard to lay flat because of the shape of the handle which needs to bend upwards as you press the board flat. I had better luck near the edge of the sink or a counter, so the handle could stay down. I think the current company claiming the “original folding cutting board” is Joseph Joseph. This one fixed the stiffness part (maybe a little too much), but cheaped out on the silicone nonslip strips.

      I've got a Joseph Joseph folding cutting board and love it. You're supposed to fold the sides up by squeezing the handle, which you can do with one hand. I love that. Mine's got good non-slip silicone strips. It doesn't lie completely flat, but that really doesn't bother me. I can get it to lie flat by pressing down on the handle but usually don't bother.

      I would much rather get the two pack of flexible cutting mats from Dollar Tree and that way if there's too many cut marks in it or if it gets too dirty and you can't clean it then you can throw it away. It rolls up very easily so that you can put your scraps into the trash. And then it straightens back out again. And if you needed to stop sliding on the counter all you have to do is wet the bottom of it and it won't slide

    First: bit disclaimer - worked restaurants/foodservice for 40 years.
    The cutting board, its warped before you even started cutting. It not being flat, for individual not overly experienced with knife cuts, you have self cutting hazards.
    Your onion demo: first, your demo there was a way of dicing an onion, more so than reducing the fumes related to crying. One variation that can help is: cut in half; peel; cut of tip and root; let sit for at least 10 minutes. If you have a lot of onions to get thru, you’ll get thru more than you normally would. I've used this method when i needed to 50lb bags at a time.
    The fan or even worse, a lit candle (nothing like warm to hit onion fumes hitting your eyes) is so-so.

    I grew up in the 70s and we had something similar to put around cartons of milk but what you have looks extremely flimsy and it doesn't look like it will hold together because it looks like it would break if you put a heavy carton of milk or juice into it. Back then we didn't have the screw top on the carton

    Folding cutting board - put a wet towel underneath, it works with flat ones as well. The folding is useful unless you wanna learn how to get stuff off your cutting board without making a mess. Useful when teaching the kids how to make food...heck I use it even when the kids aren't there, it's just easier !
    Onion goggles might be necessary for some people...but if you cut enough you get used to it and won't cry as much (based on experience)....could also try dipping it in water

    If you have trouble getting things from the cutting board to the bowl, I highly recommend investing in a bench scraper/dough cutter and using that to help scoop food off the cutting board and into the bowl. You don't even need a good one; I use a cheap plastic one that works great. Just put your non-dominant hand on top of the food and use your dominant hand to push the scraper underneath the pile and lift. Much safer and more effective than doing that with a knife.

    The way to stop cutting boards from moving is to place a damp towel under them. That is a standard chef's trick to keep any cutting board from moving around as most of them tend to do. When it comes to onions making your eyes water when cutting them, if you are using a very sharp knife, that should not be much of a problem. I keep my knives very sharp and never have any problems cutting onions.

    Growing up in Southern California where the weather is nice 95% of the time, we always kept a window fan in the kitchen window over the sink and turned it on specifically when cutting onions. It pulled the onion vapor outside and saved us from crying even if cutting the onions on the counter which was askew sideways from the centrally located window.

She said the icky noxious stuff heads towards the wet mucus membranes of the eyes. Instead of your eyes, they hit the wet paper towel. I tried it and was shocked to find that it really worked.

    For the onions: the only thing that works for me is lighting two candles. One on either side of the cutting board.
    The wet paper towel method is useless.
    I do use swimming goggles and that works, but they fog up so badly and they are awful to put on and get off.
    I would love to try these glasses with a fan because onions are so painful for me.
    Of course I'm wondering if i can get a cheaper dupe pair somewhere

At first, I was dubious about the flimsiness of the folding seams The plastic is very thin and I thought it would fall apart in no time. Well, it hasn't. Course, I only cook for one person ; so, if you're cooking all day for a big family and getting more use out of it, your mileage may vary.

    We had similar pour assists for square cartons years ago! This is nothing new.
    The folding board can be easily made by making the fold channels with simple tools and design can be changed to personal choice of pour. I use a thin silicone pad for opening jars and holding hot dishes to keep slippage to a minimum. The damp towel mentioned before by the Master chef is a good alternative for large objects.
    The onion glasses are unnecessary! Cutting the onion top off first and pealing the skin down greatly reduces the smell and tear factors. The root end uncut with the skins pulled down can become a handle while prepping and disposed of intact with less tears and messy skin pieces.
    I enjoy your videos and especially the common sense remarks.
    No pricy stainless steel gadgets are necessary to remove unpleasant food odors from hands, just use a tablespoon while rubbing it over the hands under cool tap water.
    Regards…
