It's doesn't really matter as far as the sheepshead go. They will bite it either way. I use the fluorocarbon leader because it holds up better on oyster shells if the fish takes me into structure. The braid will cut off instantly on shells.
Sure, really any bridge should do, even at the lowest of tides. Just make sure you station you're boat on the downside of the current where the eddy is behind the bridge piling.
Yeah fishing for sheepshead is fun. Haven't done it in a long time but will most likely target then again this fall. And a Pathfinder is the ultimate fishing boat in my opinion. It can do it all. My dream boat. Always has been.

Anchoring won't scare them away at all. Just be sure to put your anchor down gently.
