- Electrostatic discharge can occur between the human body and electronic components at very low voltages and current or at levels up to 3000 volts without knowing the discharge occurred. Static sensitive devices can be rendered useless in an instant causing downtime, rework, and production loss. Static safety safeguards and equipment may be put in place to minimize the risk as this video demonstrates.

When drawing a schematic, should I group all ESD protection in a single area or should I place each next to the component it is protecting? I don't know what the convention is and I've seen it done both ways.

Always place them as gate-keepers or security guards physically next to the components you are trying to protect. Just like adding your buffering capacitors next to each IC to help with voltage drop and high frequency noise mitigation.
Electrically, you could place them all in a pile (they would be connected to VCC & GND), but practically, they need to be next to what they are protecting as it does take time for electrons to flow- so it helps to think of a harmful spike trying to move along your PCB traces- if it gets to your sensitive component before your ESD protection, it's likely too late.
