    When I was young, I made some super hot chili from a Marlboro cigarette cook book (don't ask). The recipe called for a lot of habanero peppers, so I cut and crushed them all...
    ...by hand...without wearing _any_ gloves...
    The end of the day I had to throw the chili out because I messed up the recipe, but it wasn't until I laid down to get ready for bed did the real horror set in. You see, when you handle hot peppers like this with your bare hands, the oils get absorbed in your skin, and it begins to ignite every nerve you have. For TWO DAYS STRAIGHT my hands burned non stop. I tried everything to calm them, but it was impossible. I just had to wait it out. It wasn't the most painful thing I ever experienced, but it was the most consisting, long lasting, mentally debilitating sort of pain I've experienced. If you handle hot peppers, do NOT use your bare hands. You probably shouldn't make home made chili out of a cigarette cook book either...tasted awful.

      i chopped up a single habanero pepper, bare hands, i touched my face, it lit on fire, yeah honestly it's very painful, i didn't expect it to burn my face just from brief contact. after washing my hands they were fine, but not my face.

      I once got fairly mild chilli in my eye and it stung like a son of a bitch I imagine that the pain would scale with the heat of it so if you got really really hot chilli it would hurt many many more times over to this extent I wonder what's the most painful chili brand is I've no idea why I'm thinking this I think I'm tired it's 2 a.m. here

      Yeah I was surprised that not even garlic was added. Usually I add a little bit of garlic, pineapple and banana but I use vinegar and I don't know if it makes any sense to add these to fermented peppers - probably not because bacteria would grow.

      Middle Eastern people, especially Syrians, cannot handle spicy food, to their pallet it's like someone put nails in your mouth. They generally are used to bitter or sweet tastebuds.
      What is considered hot or spicy varies with the ethnicity and culture, because people who live off of hot sauces in a region for generations will develop their sensory organs different to others.
      For instance in Asia, Sichuan region of China is one of the few regions that focuses on extremely hot foods, where they literally just put a bowl of chili peppers into a stew.

      I went to an Indian restaurant and asked for the hottest thing they had and as I wanted more heat once served I asked for additional chilli. The waiter told the chef who then came out abusing me in Indian - from what I gathered they took offence to me asking for more heat :(

    😂😂😂, I laughed hard when you tried it.
    A friend of mine gave me a piece of chocolate a few weeks ago to try. He said it’s the nicest chocolate il ever taste. I ate a square and soon learned that it would be the hottest tasting food I’d ever eat. The chocolate turned out to be called “shit the bed” and it had scorpion chilli in it.
    I’m gonna follow your series and grow these hot ass chillies and spike his food with this sauce

      My dad for Christmas brought me sugar cream square with spicy in it. I don't know if it was jalapeños or habanero but I could tell that even if I am used to eat peppers my tongue was senseless because of it. My mother tried them by accident, she didn't like at all.

    Tried a Reaper for the first time ever a few weeks ago, just straight up, no bs. Guy at work asked me if I wanted to try one because we both like spicy food. It was possibly the most painful experience of my life and I've been exposed to PAVA (9.2million SHU Pepper Spray used by UK Police) and almost torn the ACL in my knee... It was definitely up there in terms of pain. But I will say they do taste good though.

      Only people who love spicy understand. I finally got to try the Carolina Reaper last Thanksgiving, which was the first super hot pepper I've tried. It was amazing how hot the thing was. Word cannot describe that level of heat. Then last week I tried about a teaspoon of the Last Dab with pepper x, and fuck me was that good.

    Our neighbor from the '80's came from Yugoslavia, she used to can Paprika and peppers in glass jars, delicious stuff ,we used to dare each other to drink the left-over brine from the jars that used to have the hot peppers in them .....you couldn't see straight for the rest of the day after a sip of that...we were about 10 years old then.....i learned from them to eat Cvarci(crapola - pork rind and crackling variations), Kupus Salata (Cabbage Salad), smoked Pork Belly, raw onion sandwich, etc...although i was raised in a conservative Afrikaans home in South-Africa, i still long for the Yugoslav culture of good,healthy eating..peace from RSA.

      If you handled these peppers the oils would get under your skin. You can drink milk when you consume the sauce. It'd be near impossible to get the oils out of your skin and will make your nerves feel like they're on fire

    When I worked in a prison every gear we had a chili cook-off every year the winner was the armory sargent.
    His secret was when the chili was done he would lift the lid and spray a little weapons grade capstun a oil based pepper spray that only good and military are allowed to possess.

    I looked at your board in the back and I've done some research in the past about the benefits of consuming hot peppers and your board is 100% correct. I've been told by a few people that eating hot sauce is bad for you that's why I did the research. I think that those who generally had a negative comment about it is those who can't eat it. :-)

      Nope totally legal. Hot peppers are what they use to make OC, bear spray, and mace type aerosol products. Beware the stuff that has no smell.

      Correct. There is a compound however called resinferatoxin , it makes ANY chilli pepper look like a glass of ice water. That stuff IS dangerous.
      People need to get a grip when you start banning food. Next thing you know they'll ban habenaro peppers because some kid ate them instead of Tide pods. After all they are brightly colored

    I have a good friend who is a 3rd generation Mexican American. His grandmother came to the US at the age of 17, many, many years ago, and she adopted me as a grandson.
    Her food is delicious, but it takes weeks for my body to stop hating me...she makes a salsa that tastes so amazing you cant stop eating, even after your lips look like you stuck them into a vacuum cleaner hose, and then applied cheap lipgloss...

    Just made my second homemade hot sauce today. Turned out good. Thanks for the great tips. That is some super hot sauce you just made. Think I will stay down to yellow habanero, cayenne, and jalepeno, and sweets. Hot enough for me.

      I'm happy to say my first attempt is bottled! I used all orange Habaneros (about 24) and 3 Fresnos just for the heck of it (and color). They're all sitting in a 2-3% brine with a few cloves of garlic. Now comes the hard part: waiting. I'll let you know what happens, thanks again for the instruction and inspiration.

    Bloody hell mate, you're seriously going for it with this one. I've got a load of scotch bonnets in the freezer for winter and I can barely even handle them, let alone this bunch. AND you put the brine in it? It would probably be less painful to just eat fire.

      And I actually held back a little bit (adding in a "mild" pepper like the habanero, lol). I gotta leave room to make an even hotter sauce next year...I reckon the Jigsaws I will be growing will end up making an even hotter sauce!

      @@ChilliChump I think you may be right on that one. The lads over at fatalii seeds are absolutely convinced that the jigsaw is hotter than the reaper. You might need a military grade gas mask when you make that one!

    Having done pretty much the exact thing you are doing in 2010, you have me cracking up! I ran my wife out of the house processing the peppers! You really don't want to put your face over the blender jar when you open it!!!!! I had a bumper crop of Scotch Bonnets in 2010. I would not even think of using this strait up! I canned a bunch of the fermented and pureed peppers. I use it to make blended hot sauce. Trying different fruit or vegetable bases and seasonings. I am now making fermented pickled vegetables and using my straight up pepper sauce to add heat and flavor. Keep up the great videos!

    you could add a little of the hot liquid to the mixer to wash out the leftovers in the mixer by shaking it. (I mean the liquid you put the chilis in.) that would save you this scratch. nice video! greetings from germany :)

    Nice job! I made a hot sauce late last year, a bit similar to yours, but with a mix of chilis, mostly red and yellow reapers, and a few infinity peppers too... I grind the peppers to a mash and ferment.. I thought the smell of that was bad.. I found out it was nothing, compared to when I boiled the mash and added apple cider vinegar.. The fumes made my lips burn! Then blending the still varm mash and straining it... Oh the horror.. Looking at finished product, decided to taste it.. Probably even less than you had... Made sure it didn't touch my lips, thank God.. The burning sensation, all the way down to my guts was pretty indescribable... Molten lava down your throat, is the way that comes closest.. Made many bottles, and gave most away (so now a lot of people hate me), and from what one friend said, it doesn't exactly get any less hot by sitting in the bottle for a few months... Enjoyed your video tremendously, and I feel your pain :D

    I have grown Carolina Reapers in the field. The first batch I simply walked out and grabbed on off of a bush and bit it in half, chewed, and after five chews I went into the "zone". Got the hiccups, mouth started salivating to where all I could do was lean over and let it rain. My hearing felt like it was shutting down and I had tunnel vision. after about 10 minutes things started to stabilize. The end result, I love it! Now we grow all kinds of hot peppers, but we dehydrate them. We only ferment our garlic. Great video!
