I am only an amateur who used to study privately under elderly couturier, who’s teacher used to study in France.With her gone I felt like all real hand work techniques and joy were gone (at least from Japan) forever..was thinking of going to Italy even just to learn, although I speak only some French and Japanese.Mais voila..💖！

I don't get how collar top is put on? seems like he just basted it on, what about the seams?
In traditional tailoring that is how they get the pattern for the top collar. It will, i think, have been removed after that, and then stitched on by machine. If not, the raw edges will have been turned under and the seam stitched invisibly by hand using a felling stitch or the like :)
The collar is hand stitched to the jacket, traditional tailoring uses almost no machine, 80% of the work is made by hand.
