I find drag tires are easier to use if you just want to 3 star the drift trials, as you can full throttle with easier handling, in a slower, but similar way it worked in Payback!
Though for added challenge, use drift tires. Full throttle if you need to make a sharp turn, feather/throttle lightly if you need to maintain a wider drift. It's weird to get used to, but it can be satisfying when you figure it out!
