How To Cook Kilawin!

  • Pork Kilawin is a scrumptious dish excellent with rice or as "pulutan" for your drinks. Preparing this dish is very easy and the ingredients are available almost in every store or wet market.
    Did you know?
    Kilawin and Kinilaw are different? Kilawin is cooked and Kinilaw is eaten raw.
    ********INGREDIENTS*********
    1/2 kilo pork skin
    8 calamansi
    1 medium size red onion
    1/2 cup vinegar
    2 tablespoon ginger
    1/2 teaspoon salt
    red and green chilis
    1 1/2 tablespoon black beans (optional)
    1 salted egg (optional)
    1 tablespoon pepper corn
    2 bay leaves
    **********************************
    PROCEDURE
    1.) Clean the pork skin and wash thoroughly
    2.) In a pot put the pork skin, bay leaves and pepper corns
    3.) Boil for 30 minutes
    4.) When tender remove from the pot and slice the pork skin
    5.) Put the sliced pork skin in a bowl add the minced ginger and toss
    6.) Add the sliced onion and toss
    7.) Squeeze the calamansi and pour into the bowl and toss
    8.) Add the vinegar
    9.)Add the chilis
    10.) Add Mayonnaise
    11.) Add the Green onion
