They can have millions of rows added in a day for a big organization.

What/when is the ideal way to update the aggregate fact table? Can we define a trigger on the source table and update the destination fact table for every record inserted in the source or is it a bad idea?

Yes, you don't want to engage your fact table for DML that frequently, you can update it as a part of a batch process.
