    시간이 오래 걸리네요 멸치 똥도 안 빼는데 쓰지 않다는 비법이 뭔가요 알고 싶네요

      첫 번째 멸치 구입을 잘 하셔야지 되고. 두 번째 잘 볶아야 하고. 세번째 잘 건조를 하셔야 합니다.

    육수를 냉장고에 넣어두고 쓰나요? 계속 약불로 끓이며 쓰나요? 약불로 끓이면 쫄아서 짜지겠죠?

      점심시간 맞춰 끄내노시고 점심시간 끝내고 다시 냉장고에 넣으시면 됩니다.

    사장님 저렇게 몇그릇정도나오나요? 그리고 대략판매가격도 알고싶습니다

      육수를 60키로 정도 끓입니다
      총육수58,000 ÷ 칼국수 끓일 때 육수량이 대략 750 그램 이면 = 77그릇 정도 나온다고 생각하시면 됩니다.

      면에 따라 끓이는 시간이 틀려집니다. 어떤 면을 쓰시는지? 먼저 말씀해 주시면 그 시간에 대해 이야기해 드리겠습니다. 참고로 생면은 6분정도 보시면 됩니다.
