Good morning sunshine. You always have a way of making this grannies heart so tender. I wish I was there to help you with all this hard work in the garden and kitchen. I have done that for many years (and still do) for my family so I understand the pleasure but also the hard work involved. God sees all you do for your girls and He also has a record kept of all you’ve done for your parents and grandparents. Even the people you come in contact with that you’ve had a kind word for and a helpful hand. I know it’s all about Him and His goodness and mercy but I also know people like you are the apple of his eye and the salt of the earth. Just as you’ve told us Justin, you matter. Always remember you’re in our prayers . I’ve always said, I could keep five of me busy. Lol Always lots to do this time of year. Those tomatoes are going to be so good with cat head biscuits and bacon. Yum!👩‍🌾☀️💙🙏

My mama canned more maters than anybody I ever known.
    Us kids had to help.
When you have to feed 10 people , you do what ever it takes.
    We can wash tubs full.
Nothing went to waste from our garden.
Daddy always planted field peas in the with the corn.
He would take the ole mule and a drag with sides.
We would pick the peas on one drag and then break the corn and put it in the other drag.
I don't remember ever saying I don't want to do that because I love corn bread, tomatoes and dry field peas.
Nothing better than tomatoes and corn bread and hog crackles.
I loved and still do love fried middling meat with rice and vegetables.
Dryer lima beans were so good to.
We used to take the dry peas, put them in big old bag and knockout up side of the smoke house and then lay the out on a sack sheet and then she would choose a good windy day, we would make four of us take each corner and throw the colors up and the wind would blow away the craft and trash away and then she would put the peas or beans in a cloth rice sacks.
We ate a lot of rice, biscuit and saw water fish down on the coast.
I love to hear you talk.
I haven't heard anyone refer to their skin as hide since my mama died.( your daddy's hide)
God Bless and I hope you are getting some rest today.

Good morning, Justro! Those maters are gonna be some fine eating come winter! Nothing to me is more satisfying than pulling those jars out of the canner. I try to stick to a rule around here, when 7 jars get empty and setting on my counter I find something to can back into them. Sometimes it’s from the farmers market if I haven’t grown it and sometimes it’s meat….but I try my hardest to keep my jars refilled with something we will consume. You did an excellent tutorial on canning. Wishing you and the girls a blessed Sunday!

A story my granddad told me, a little related to your story.
During the Great Depression, Gramps was working in a foundry. If you’re squeamish, stop reading here.
He was just down line of the crucible changing molds. The molten iron would come down and pour into the molds. His job was to change the molds. Well once, the side of the mold (they’re formed in a type of sand) split and poured white hot, molten iron into his work boot. He kept on working because as he said, ‘That was food in the table’. When he got home and removed his boot, half of his foot was still in the boot. Another time he lost half of his finger in a punch press and again finished shift. That shows how resilient people were back then. It’s hard to imagine how they could deal with such intense pain. All for their family. No way I could’ve endured what they did.

Leave them in the boiling water until you see the skins start to ripple. Usually 3 minutes. Blanch them in the cold water like you’re doing. The extra 2 minutes will make the skins pull off in your hands with just a little squeeze. The heat has died down just enough to let my maters start to produce instead of drop their blossoms. I can’t wait to do some canning myself. And see how these maters do in my climate. I’ll let you know how they do.

@@metcalfmills5679 OK, would be interesting to know the variety.
When they are that nice, they are usually some standard well known hybrid.
My heirlooms are always a little off shaped. But tasty none the less.
      Peace, Walter

I’m still making the tomato soup, three times in about ten days 😂 I make grilled cheese with it the first day. Then use some in my creole okra the next day. The rest gets used for pasta sauce. I learn something new every video. I have never thought to use the canner basket to scald the tomatoes. I might try that. I could feel the pain of second and third degree burns all over again when you told the story of your daddy getting scalded. One of my first cars had a bad radiator. One day I got scalded. The skin looked like wax melting down my arm. The good news is that I was already at the hospital. I had went to visit a friend. So I agree, boiling water is dangerous 😩
