Vincenzo's Plate Yeah, watched that first video and when I saw that Italian grandpas & grandmas cringe on that pasta, man that’s analogous to my own grandparents’ cringe when tasting most of dim sums here back in Jakarta (I am Chinese Indonesian heritage anyways, and my grandparents do come from Guangdong & Hong Kong). You nailed that one tbh. But seriously, you may wanna try to explore the topics of food anthropology alongside being food ambassador. First, to expand your horizon, second, as a gesture/goodwill of peace making. Yes, I do agree that you should not apologize for telling the truth, but again, when talking about “authenticity” in food, it’s a very touchy subject and this is where being kind often becomes more significant than being right...you have to consider not only the nature or social, but also history & politics behind. Just can’t escape it... Yes, I do cook as a hobby and I do agree that there are things that must, better, may, or never be paired/mixed with something else. Mix it right and people call it “fusion”, mix it bad and it becomes “bastardization”. Yes, I do agree if good food is good food, and bad food is bad food. But how things become good and bad oftentimes tell you more than the end result itself. As for the food anthropology topic, may I suggest you discuss about Southern Italian food (Napoli, Sicily etc) since that become the root of many Italian American food we today know? Growing up, the first pizza I eat and enjoy was pepperoni pizza, the first spaghetti I got was spaghetti meatballs. The first time I tried pizza margherita (thin crusted), gnocchi was in a London Italian restaurant. As much as I enjoy authentic Italian food, I do also wonder of how things come to be, and for that, we need chef figures like you to help crack the code. Peace from Jakarta
I am third generation Italian-American, my grandmother was the best cook in the world. But when I went to Italy I found there was a lot more to Italian food than I had believed. My family all came from around the Piedmont area, but even THEIR food was different than what I was used to. As I traveled east, west and south, it was all different, and all absolutely fabulous !! ( Except for one little pizza place in Florence, they had cold premade pizza that they would microwave !😖😖).
Olive Garden is Italian food for non-Italians. Sad thing is that it costs around the same as if you went to a real Italian restaurant. It also depends where you live. I live near Providence, RI - large Italian population, great restaurants.
Marko Antonio - exactly, it has it’s place and enough people obviously like it or it wouldn’t be a successful chain. Yes, there are definitely worse. My point is, in a state like RI, there is absolutely no reason to ever go to Olive Garden if you want real Italian food.

As an Italian living overseas I have to say that many people are confused on what real Italian food is, because of many copycats 'Italian' restaurants. So, well done, Vincenzo, to explain real Italian food. About that video? I think one just needs to watch it with a bit of irony. 😀 ciao
@@vincenzosplate I'm not pissed off. I may be an American chef but I sure as hell am not going to pervert Italian cuisine. That having been said, people I know love macaroni and cheese. I boil the macaroni to Al dente. Then create a bechamel. Add sharp cheddar cheese to the bechamel. Put in a casserole dish then place more cheddar on top... Cook until it's somewhat carbonized on the top. Look I know you don't even consider cheddar cheese to be real cheese and that's fine but you really should learn some respect. People like the dish do I like it? Oh no I don't like it I'm a chef I think it's dog food. I cooked it because I loved my mother and my girlfriend who both loved my cooking. Remember vincenzo, chefs like us have higher standards. But we still have to cook things that we don't want to in order to please others. 🧐❣️💯
Every country adapts other countries inventions, technologies and food if its introduced. Nothing new. In the Netherlands the chinese restaurants dont serve real chinese food, its not suitable for our pallet. Same goes for Indian food. And im sure it also goes for Italian food. Here we put so much on top of a pizza its ridiculous. Go to italy and you get to taste the dough instead of just topping. Anyway i believe its perfectly fine and normal to adapt/change other countries recipies. If i try to make a good pasta in the Netherlands (with a little help from Vincenzo ;-)) i use fresh and good ingredients only and cook with pleasure. I believe thats what you can do to honor the art of cooking any culture's food, adapting it to your country doesnt diminish that. But on that note: I would never consider offering an italian friend my "italian food" even if its not out of freezer and homemade, too much respect for what theyre used to eat :-))
I didn't find your video arrogant. In fact, you really helped me understand the Italian culture. I have a friend who is an Italian chef, from Rome, and I've heard the same from him. Also, you're not the only person online who is explaining the same thing about Italian food. I want to be educated about it. It makes cooking and eating the food more enjoyable...and much healthier. I learned from you how to do a real carbonara and I am from Austria and was in Italy I don't know how often. And believe me never ever I want to have another one! A real Italian pizza is incomparable with anything that people around the world get served as pizza!
Have you watched the original video? Every dish was purposely made bad to make american italians look bad. The pizza he served was frozen. You can serve a frozen pizza and than say american pizza is bad. Did you see the chicken alfredo? It had peas in it and was overall too watery. If you do it right, chicken alfredo can taste good.

I do not understand why processed food is such a bad word for people. Do you always make fresh pasta yourself or do you buy factory made processed pasta from packages? Do you buy cured meat? Curing is a method of processing meat. Do you buy raw milk or pasteurized milk? You people talk as if you are on paleo diets.

I appreciate what you do for Italian culture and cuisine. I'm not Italian, butI did spend a year living with a lovely Italian family in Palermo, and after returning to Hong Kong I've been introducing my family and friends to how authentic Italian food should be like. I feel the same when I was studying in the UK and I saw the Westernized "Chinese" food. Sure, everyone can make and eat what they want, as long as they are respectful and don't misguide others about the cultures.

I’m middle eastern and I can’t stand when other cultures change middle Eastern cuisine and say this is how it’s made, it’s like saying Taco Bell is Mexican food lol you see how offensive that would be to the Mexican culture? Many foreigners don't understand that it's about tradition or not. If a youtuber talks about traditional recipe (80% of the foreigners that make Italian dish), then he should make the traditional version of the recipe. If he wants innovation, he should say that's not the traditional way or use a different name for the dish. That's it. In Italy there are a tons of variation or creations, (for example a lot of varieties of tiramisù, of lasagna, of pizza and so on) and there is the traditional way too.
Great video Vincenzo! No need to apologize, your passion is “traditional” Italian food, not variations of it. I think if the world was as enthusiastic in learning each other’s culture, as we were its cuisine, the world would be a better place tomorrow...
I love that you educate us about the original Italian food. Thank you. I am from the Deep South in America where we take some pride in our regional cooking. Having traveled to other parts of the world it is interesting to see other people’s versions of our cuisine. It’s not about better or worse. It’s just different. Since starting my venture into cooking I've been looking for an authentic source of Italian Dishes, Learn the way the Italian eats and why. I can say that here in America many misconceptions about Italian food is taught. After finding this channel I am getting the experience of eating like an Italian, albeit I still have to get some of the cheeses and meats sourced and shipped in from other states but, I am learning because of you Vincenzo, and as an addition I also learn Roman dishes too. Much appreciation for all you do out here in TH-cam.
Since I found out about your channel I simply can't stop watching your videos. Even started looking for guanciale to make a proper carbonara (I'm Spanish, based in Poland). So please don't stop filming and sharing your love and pride for your cuisine, because it's amazing. We know in the XXI century many people get so easily offended for nothing, so don't let them discourage you to continue this great job you're doing.
I'm an Italian-American who live in the greater NYC area (North Jersey) I remember my dad told me that a client of his had client who lived in the middle west who was really excited his town finally had Italian food. It was an Olive Garden. The NYC area is where you're going to get good Italian-American food and even then you have to go to the really good places to get something that's comparable to what you'll get in Italy. Except for pizza. I actually think NYC style pizza was better than the pizza in Rome. (I know Naples is where the best pizza is supposed to be but I've never been so I can't compare). The problem as I see it is that ingredients in the US are just not as good. When I went to Italy none of the food I had tasted "fake" the way most American meals taste. I think one aspect that should be addressed is that when Italian-Americans who try to learn more about Italy and Italian culture it's not uncommon to be met with hostility from Italians. For Italian-Americans even though most of us are very assimilated into America and often not very knowledgeable about Italian culture we still feel a connection to Italy and level of kinship with Italians but such feelings seem one sided as most interactions we get with Italians (at least online) is to be mocked or told that their is no such thing an "Italian-American."
you know, in Peru we defend our food also... we get it all the way. I particulary understand changes in some dishes when they are made far from home, even try it, but at the same time why it can not be called the same, like our cebiche is simple, fresh fish, lemon, onion, and salt... after that you can make it from shrimps, sea food in general, but using the same technique, man! even how you cut the fish is important, otherwise is not a cebiche... The same with your carbonara, wich I tried at home for first time with your advice and it was amazing!!! I really appreciate it, it would be totally different if I tried a ¨cream, milky carbonara¨ for first time, I would hated it because I really don´t like so much milk flavor. Thanks for that, and for teaching about your culture and country. We have to stay firm to take care our history, if not it disappears, that´s what people with less cultural legacy can not understand.

Vincenzo, there is no need to apologize. You have to remember, many people aren't experienced enough to understand what's outside of their insulated bubble. It's not your English. It's very clear what you have set out to do and I for one am extremely grateful for your channel as you had validated what I had been searching for and attempted at home and with friends. Eating real Italian food without the travel. You see, I've eaten at many of the best restaurants and restaurants that claim to be authentic food from whichever country I happen to be in the mood for in major cities as I've moved from place to place but mostly in NYC and the surrounding areas. This is what I have found and may explain why you're getting these negative comments from severely misguided people: Authentic restaurants don't do well in the US because Americans have been fed marketing and sales from large food corporations selling World food as if it's from the old country (wherever that may be). So what happens when a restaurant opens up with real food from the old country? They typically only get 2.5 out of 5 stars on yelp and this is why. They order the wrong food or they have a warped expecting of how a dish is supposed to be but didn't get it and think the place doesn't know how to cook the food properly (which is agonizingly ironic). For example, an authentic Chinese restaurant specializing in real regional chinese food wouldn't have a clue how to make general tso's chicken or worse, sweet and sour chicken. It's not even on the menu. Its American food, not Chinese. Yet they force these chefs to make it, they aren't satisfied cause of obvious reasons, and they leave 1 star reviews... Their approach is all wrong. Worst yet, they are so stubborn (us Americans hate admitting were wrong even when we totally are. see: racism) that they can't wrap their head around exploring what's real and asking for real Chinese food as recommendations to try. You are NOT being arrogant. You are helping educating us. I am Asian American. I have been seeking out real French, Italian, Russian, various Scandinavian, German, Thai, Vietnamese, Mexican, various south American, Spanish, regional American, Japanese, Chinese, etc dishes as it has become clear to me I had been lied to and that, despite having lived in one of the most diverse cities in the world, real food from those countries are not offered at almost all of the restaurants. Italian restaurants for example, in all of Manhattan, there are only 3 restaurants that serve real Italian food. And they aren't popular nor have they made a name for themselves in reviews, social media, etc. It's mostly the gimmicky or celebrity chef restaurants that make the name with their cream in pasta and the like. I'm grateful for the friends I've made in NY who are directly from all over the world who have introduced me to real restaurants of their country. After decades of thinking I knew about most countries food, I've only started to grasp what it actually is the past 5 years or so. I was happy I've been making carbonara the right way (guanciale is very difficult to find even in NYC). Your videos confirm that I have. And I've learned additional nuances thanks to your videos as well so thank you very much for that. The other thing to keep in mind about the US, every region and even state is very different. For example, there's a reason besides a few pockets, Asians don't live in the south (racism). So people in the south don't get to experience real Asian food as a result. I have not seen a German restaurant make German food the right way. I have always thought German food was dry and disappointing as a result. It was my "aha" moment several years back that every mom, aunt, grandma from every country makes the best food and blows restaurants out of the water. There is more soul, history, culture, love in those food. So I started asking people from around the world to share those recipes with me. I have made German Schweinebraten with her family's recipe and she told her mom that mine was better than her's (I now need to travel to Bavarian region of Germany to apologize to her mom for her having said that). I can honestly say what I make at home blows whatever is offered at restaurants out of the water in terms of enjoyment, family, and enrichment. I even consider wine pairing with what's typical of that region. Having said that, there's another aspect as to WHY this type of food isn't marketed. It doesn't make money. Profit margins in restaurants. If everyone made something based on real recipes, even if creative, there isn't enough to distinguish them from other restaurants forcing them to compete by lowering pricing. This is where celebrity chefs come in. This is why investors like putting money in those. This is why most Americans don't know, are uneducated about it, and vehemently lash out at people trying to enrich us like you. They don't want to admit they have been lied to, that they've been duped. We as Americans forgot what made us great. The influx of ideas from other countries and the incorporation of those ideas to improve our country. Instead of that we now have a more insular (if you don't like it, leave) which puts us back to the Stone age. Please keep that in mind when you are reading these comments from the misinformed. I hope it also gives you renewed strength and vigor to continue what you have started. I would LOVE to see more videos of carrots regional Italian dishes. Your equivalent for Korean food is maangchi's channel. For Japanese good I'd recommend "Japanese Cooking 101". Kenji's channel as you know is great for learning techniques based on the scientific approach on a more biochemistry perspective. Alex approaches it more from an engineering/physics perspective. It would also be great if you could introduce various wine pairings. I've found for example gragnano is made right next to Napoli. I have tried it with Neapolitan pizza (Keste is the best in NYC for real Neapolitan pizza) and it goes amazingly with it. It's my understanding beer is more typical but give Gragnano a try with it. I think you'd be happy with it. Cheers!

What you are doing is great. You educate people on what italian food really is. Im from mexico so i understand the importance of preserving traditional cuisine.
If Italians don't like Italian-American food, that is fine, everyone has their preferences. Personally I like cacio e pepe much more than mac and cheese, but I also love a good plate of well prepared spaghetti and meatballs because in my opinion it's super tasty. If you don't share that opinion, that is fine too, but I don't understand people who so angry that there are other people in the world who like Italian-American food.

I labor under no delusions. I understand there’s a difference between Italian-American food, and authentic Italian food. You know what? You can like both. Americanization of ethnic food happened because when immigrants came to the United States they didn’t have all the ingredients that they had in the old world. They had to improvise with what they had. So they substituted. I love Spaghetti and Meatballs. I learned how to make it from a second generation Sicilian. I use ground pork, beef, and veal, fresh oregano, fresh basil, eggs, and minced onion. The sauce. Fresh Roma tomatoes, and always fresh Italian herbs. Now if I go to Italy am I going to expect to get Spaghetti with Meatballs, or Meat Sauce? No. Am I going to get a pasta with bolognase sauce? Yes! Don’t get stupid. Don’t argue over food. Don’t hate on one food over the other. Enjoy the variety of options we have. Understand that recipes changed not because they were trying to disrespect their culture or traditions, but because of the situations they found themselves here in the New World.

I'm glad you uploaded that video. I cook for myself and my wife and friends. I believe that the closest thing to any culture is that culture's food and should be held sacred. I have no problem with people creating fusions but, if I ask for spaghetti carbonara I expect the traditional italian dish and only that.

Americans dont understand that in many cases people had to change recipes from back home and adapt them with ingredients more available for them. But every true italian knows thats theres nothing like back home, that food is the most sacred thing that joins the family together and its how we show love, so we dont like it disrespected. And when i get to visit my family in San vito lo capo, nothing comes even close to that experience. Some people are just ignorant to what food means for some. Keep up the amazing work. You remind me of all my italian family and that burning passion to defend what we love.

There may not be an authentic Italian restaurant thousands of miles away, but thanks to you guys I can make at least a more authentic version at home... and GOD it's worth it. There is nothing better than authentic Italian recipes cooked with fresh, authentic produce, made by hand and with love for the dish and the people eating it. I may be a caucasian Aussie but I had the privilege of living next door to an old Italian woman and her husband for a decade during my teens. I still make her recipes, unchanged to this day. The invites over for dinner or lunch were never turned down 👍
I enjoy so much your videos. You put so much passion in your dishes and it`s wonderful and relaxing to watch you cook. You are not being offensive, people get offended so quickly over nothing; americans especially; but they should watch Gordon Ramsay or just go outside if they want to see offensive, And your Italian seasoned English has a charm of it`s own;). I’m Italian American and I have seen these videos before. They are funny. There are some good Italian restaurants here in the states.. I grew up in NY going to Italian family owned types of Italian restaurants. However there are chains here that are not true representation of authentic Italian food. Examples like Carrabas or Olive Garden, Pizza Hut lol. I have traveled a lot throughout the world and eaten many different cuisines. Unfortunately the USA has many unhealthy horrible food options like fast food, chain restaurants etc. Just my observation
We have the same situation in South Africa and it applies equally to Italian, Greek, Portuguese. The best places are the mom and pop joints. Real honest food
surely there are some Italian restaurants faithful to what are the Italian culinary traditions, but many others are not, and this is what I would like to make people understand! It’s better to make a nice plate of pasta at home than to go in restaurants that have nothing about Italy! 🤷🏻♂️

Vincenzo I love your videos they educate me about Italian cuisine so that I can recreate it at home. Sometimes I want meatballs or an American Alfredo and that is great. But sometimes I want to recreate a perfecto carbonara with guanciale like I am in Italy and that’s when your channel inspires me. Don’t listen to nasty comments people are never happy. I love your videos! My neighbor is Italian and he is really proud of his heritage and most of all, the food! He really taught me well how to cook REAL carbonara and pretty much, I got hooked into it and never went back to creamy carbonara. Is just that food has changed when it moved out from country of origin and adjusted to "satisfy" the taste of people abroad. It really makes me sad that traditional food has adjusted and looks nothing like traditional food that you used to eat when you were young. However, the origin of food never changes. People hearing the word "carbonara" or "pizza" they can always think of Italy as the food of origin and they already did their job, spreading Italian-ish cuisine and spreading Italy's fame of food to world. (I prefer calzone over pizza :D) Is just that they never tasted the real traditional style. I think you should keep making great videos and show us how the real cucina rustica is made and keep teaching us how to make one. Keep up the great work!
Watching these videos, really the react videos, makes me want to find authentic Italian food, I’ve been eating Olive Garden and things like this, and I honestly never knew, I’m so glad I found this channel bc I’m excited to find dishes like this made the proper Italian way

I'd like to let you know that I have the greatest respect and admiration to the passion you show towards the authentic italian food. I made carbonara following the authentic recipe recently. Just spaghetti, pecorino cheese, eggs, pepper and pancetta(I couldn't get guanciale). It was so good. Although I was tempted to add garlic. I think it would make an already great dish it even better. I do have to say that even if a dish isn't authentic Italian but just Italian inspired it doesn't mean it can't be good. Fettuccine alfredo isn't authentic Italian but it's delicious. Especially with chicken. I see nothing wrong with blending flavors from different places.
To me, at first i didn't like carbonara at all because i ate cream version. One day I try to make as authentic as possible. Not use cream. Find the best parmazan(unfortunate i can find only fake one) and then i had it it change my espect to italian crusine.
Keep on doing you. When humanity evolves all the time so does the food. We are losing traditions and those golden old ways to do things. I just moved out from Malta where i had a lot of Italian friends and your traditional food culture is so golden that it NEEDS to be protected, thats all you do. Love from Finland

I have only just started watching your videos. I find them informative and enjoyable ! If I want to eat Italian food then any cook preparing my meal must have some information about the genuine heritage of the dish being prepared. The same can be said of Chinese food, or any of the major cuisines throughout the world. Of course the skills needed to prepare such foods can be taught, replicated and, in some case, used as a base for creativity. This is culture; everything is downstream from culture. Whatever happens, please don't stop making cooking videos - it's so refreshing to see someone who is passionate about food and truly believes in what they are doing. I use your channel for recipes as well as several others (boun-A-Petitti is another great one) and the one thing that they have in common is that there is no rubbish used... everything is made from fresh, unprocessed ingredients which ultimately leads to tasty, healthy food - what's not to like? Stand up for what you believe in - only the small minded people are going to complain

Vincenzo: I'm an Italian American who, last year, visited Firenze and Rome. I fell in love with traditional Italian food the way it's made in Italy. While I still like some of our Americanized versions (and I occasionally make some of my own Italian American family recipes) I have now desired to learn the original way these dishes have been prepared and served. It comes from a desire to connect with my roots in an authentic way. Thank you for your channel, and thank you for your commitment to original traditions. It gives many of us an opportunity to try authentic dishes prepared the way they have been for centuries.
Your story sounds similar to my dad's (also Italian). He left home when he was young, travelled the world, had a passion for cooking (which he passed down to me). His dream was to work on cruise ships as a chef though he ended up cooking for local communities instead. Some of the communities where he lived were quite poor and his skills were much appreciated: his knowledge of how to combine few seasonal ingredients to make a tasty dish came in handy. This was before the internet era so he never became famous but he was well liked as good food always has the ability to bring people together: it's an international language! Most understand this basic principle and love what you do. Unfortunately the internet brings out the worst in some people. You are right to make your position clear but from now on it's probably best not to pay attention to hateful comments. Anyone with an ounce of intelligence can see that you are passionate about what you do and just want to share that passion with others.

I appreciate your honesty. I grew up in Holland (bad cuisine) and Belgium (fantastic cuisine), and I am currently living in Vancouver Canada 9a well balanced fusion cuisine). Personally I have had my best meals in Italy. So I agree with simple basic ingredients that provide the ultimate flavours provided these ingredients were assembled properly. Just a Q. There is a Austrian dish called Käsespätzle. It is a a specific „noodle“ mixed with cheese and onions. Does this recipe belong to Italy because it is basically also cheese with noodles?
italian food is the best because they use restraint when seasoning so you can taste the beutiful ingredients. im sorry i love all food but when you dump 50 spices in something i cant taste anything underneath. harmony .italian american pasta number 1 problem is most people cook the pasta and sauce completley seperately and then combine on the plate they do not marry like this. 5 to 6 ingredients max per dish and you cant taste them all, my 2 cents sorry i cant spell

Italian food is absolutely incredible. Video was a laugh. There was a video from "Globe Trekker" from like 15 years ago where the host ate 'Sunday sauce' at an old couples apartment in Naples. Looked like one of the best dishes ever. Simple and homemade.
Ciao, Vincenzo. Thanks for this and the previous video. They were very enjoyable and spoke some truths in a very entertaining way. As the son of American immigrants, and as someone who lived in Italy for 10 years, I wholeheartedly agree with your comments, because as food cultures get transplanted to other places, they necessarily get modified, because of the availability and quality of ingredients, because of the influences of the local cultures, even because of the changing tastes of immigrants themselves. With Asian cultures, we have modified our food in every country we moved to, and each tastes different from the other. For example, I find Italian-Chinese food oilier, subtler in flavor, and the rice like insalata di riso, to accommodate Italian tastes. Is it authentic Chinese? Yes and no. As much as it follows the basic principles of the recipes, it is also its own unique cuisine. In the same way, I find that there is a noticeable difference between Italian and Italian-American cuisine. For example, I find Italian sweets and sweet products such as Nutella, far sweeter here than in Italy because Americans like things sweeter; Americans add cream, butter and milk, to carbonaras because if the influence of northern European cultures and because we enjoy those heavier, creamier textures; and we tend to add tons of garlic to Italian dishes, whereas in Italy, frying then discarding whole garlic cloves is sufficient. So thanks again for presenting a thought- and conversation-provoking subject. Grazie tanto. Buon proseguimento!

Yes, I do agree that you should not apologize for telling the truth, but again, when talking about “authenticity” in food, it’s a very touchy subject and this is where being kind often becomes more significant than being right...you have to consider not only the nature or social, but also history & politics behind. Just can’t escape it...
Yes, I do cook as a hobby and I do agree that there are things that must, better, may, or never be paired/mixed with something else. Mix it right and people call it “fusion”, mix it bad and it becomes “bastardization”.
Yes, I do agree if good food is good food, and bad food is bad food. But how things become good and bad oftentimes tell you more than the end result itself.
As for the food anthropology topic, may I suggest you discuss about Southern Italian food (Napoli, Sicily etc) since that become the root of many Italian American food we today know? Growing up, the first pizza I eat and enjoy was pepperoni pizza, the first spaghetti I got was spaghetti meatballs. The first time I tried pizza margherita (thin crusted), gnocchi was in a London Italian restaurant.
As much as I enjoy authentic Italian food, I do also wonder of how things come to be, and for that, we need chef figures like you to help crack the code.

I am third generation Italian-American, my grandmother was the best cook in the world. But when I went to Italy I found there was a lot more to Italian food than I had believed. My family all came from around the Piedmont area, but even THEIR food was different than what I was used to. As I traveled east, west and south, it was all different, and all absolutely fabulous !! ( Except for one little pizza place in Florence, they had cold premade pizza that they would microwave !😖😖).
Olive Garden is Italian food for non-Italians. Sad thing is that it costs around the same as if you went to a real Italian restaurant. It also depends where you live. I live near Providence, RI - large Italian population, great restaurants.

@@vincenzosplate I'm not pissed off. I may be an American chef but I sure as hell am not going to pervert Italian cuisine. That having been said, people I know love macaroni and cheese. I boil the macaroni to Al dente. Then create a bechamel. Add sharp cheddar cheese to the bechamel. Put in a casserole dish then place more cheddar on top... Cook until it's somewhat carbonized on the top. Look I know you don't even consider cheddar cheese to be real cheese and that's fine but you really should learn some respect. People like the dish do I like it? Oh no I don't like it I'm a chef I think it's dog food. I cooked it because I loved my mother and my girlfriend who both loved my cooking. Remember vincenzo, chefs like us have higher standards. But we still have to cook things that we don't want to in order to please others. 🧐❣️💯
Every country adapts other countries inventions, technologies and food if its introduced. Nothing new. In the Netherlands the chinese restaurants dont serve real chinese food, its not suitable for our pallet. Same goes for Indian food. And im sure it also goes for Italian food. Here we put so much on top of a pizza its ridiculous. Go to italy and you get to taste the dough instead of just topping. Anyway i believe its perfectly fine and normal to adapt/change other countries recipies. If i try to make a good pasta in the Netherlands (with a little help from Vincenzo ;-)) i use fresh and good ingredients only and cook with pleasure. I believe thats what you can do to honor the art of cooking any culture's food, adapting it to your country doesnt diminish that. But on that note: I would never consider offering an italian friend my "italian food" even if its not out of freezer and homemade, too much respect for what theyre used to eat :-))

Have you watched the original video? Every dish was purposely made bad to make american italians look bad. The pizza he served was frozen. You can serve a frozen pizza and than say american pizza is bad. Did you see the chicken alfredo? It had peas in it and was overall too watery. If you do it right, chicken alfredo can taste good.

I appreciate what you do for Italian culture and cuisine. I'm not Italian, butI did spend a year living with a lovely Italian family in Palermo, and after returning to Hong Kong I've been introducing my family and friends to how authentic Italian food should be like. I feel the same when I was studying in the UK and I saw the Westernized "Chinese" food. Sure, everyone can make and eat what they want, as long as they are respectful and don't misguide others about the cultures.

Many foreigners don't understand that it's about tradition or not. If a youtuber talks about traditional recipe (80% of the foreigners that make Italian dish), then he should make the traditional version of the recipe. If he wants innovation, he should say that's not the traditional way or use a different name for the dish. That's it. In Italy there are a tons of variation or creations, (for example a lot of varieties of tiramisù, of lasagna, of pizza and so on) and there is the traditional way too.

Since starting my venture into cooking I've been looking for an authentic source of Italian Dishes, Learn the way the Italian eats and why. I can say that here in America many misconceptions about Italian food is taught. After finding this channel I am getting the experience of eating like an Italian, albeit I still have to get some of the cheeses and meats sourced and shipped in from other states but, I am learning because of you Vincenzo, and as an addition I also learn Roman dishes too. Much appreciation for all you do out here in TH-cam.
Since I found out about your channel I simply can't stop watching your videos. Even started looking for guanciale to make a proper carbonara (I'm Spanish, based in Poland). I'm an Italian-American who live in the greater NYC area (North Jersey) I remember my dad told me that a client of his had client who lived in the middle west who was really excited his town finally had Italian food. It was an Olive Garden.
The NYC area is where you're going to get good Italian-American food and even then you have to go to the really good places to get something that's comparable to what you'll get in Italy. Except for pizza. I actually think NYC style pizza was better than the pizza in Rome. (I know Naples is where the best pizza is supposed to be but I've never been so I can't compare). The problem as I see it is that ingredients in the US are just not as good. When I went to Italy none of the food I had tasted "fake" the way most American meals taste.
I think one aspect that should be addressed is that when Italian-Americans who try to learn more about Italy and Italian culture it's not uncommon to be met with hostility from Italians. For Italian-Americans even though most of us are very assimilated into America and often not very knowledgeable about Italian culture we still feel a connection to Italy and level of kinship with Italians but such feelings seem one sided as most interactions we get with Italians (at least online) is to be mocked or told that their is no such thing an "Italian-American."
you know, in Peru we defend our food also... we get it all the way. I particulary understand changes in some dishes when they are made far from home, even try it, but at the same time why it can not be called the same, like our cebiche is simple, fresh fish, lemon, onion, and salt... after that you can make it from shrimps, sea food in general, but using the same technique, man! even how you cut the fish is important, otherwise is not a cebiche... The same with your carbonara, wich I tried at home for first time with your advice and it was amazing!!! I really appreciate it, it would be totally different if I tried a ¨cream, milky carbonara¨ for first time, I would hated it because I really don´t like so much milk flavor. Thanks for that, and for teaching about your culture and country. We have to stay firm to take care our history, if not it disappears, that´s what people with less cultural legacy can not understand.

Vincenzo, there is no need to apologize. You have to remember, many people aren't experienced enough to understand what's outside of their insulated bubble.
It's not your English. It's very clear what you have set out to do and I for one am extremely grateful for your channel as you had validated what I had been searching for and attempted at home and with friends. Eating real Italian food without the travel.
You see, I've eaten at many of the best restaurants and restaurants that claim to be authentic food from whichever country I happen to be in the mood for in major cities as I've moved from place to place but mostly in NYC and the surrounding areas.
This is what I have found and may explain why you're getting these negative comments from severely misguided people:
Authentic restaurants don't do well in the US because Americans have been fed marketing and sales from large food corporations selling World food as if it's from the old country (wherever that may be). So what happens when a restaurant opens up with real food from the old country? They typically only get 2.5 out of 5 stars on yelp and this is why. They order the wrong food or they have a warped expecting of how a dish is supposed to be but didn't get it and think the place doesn't know how to cook the food properly (which is agonizingly ironic). For example, an authentic Chinese restaurant specializing in real regional chinese food wouldn't have a clue how to make general tso's chicken or worse, sweet and sour chicken. It's not even on the menu. Its American food, not Chinese. Yet they force these chefs to make it, they aren't satisfied cause of obvious reasons, and they leave 1 star reviews... Their approach is all wrong. Worst yet, they are so stubborn (us Americans hate admitting were wrong even when we totally are. see: racism) that they can't wrap their head around exploring what's real and asking for real Chinese food as recommendations to try.
You are NOT being arrogant. You are helping educating us. I am Asian American. I have been seeking out real French, Italian, Russian, various Scandinavian, German, Thai, Vietnamese, Mexican, various south American, Spanish, regional American, Japanese, Chinese, etc dishes as it has become clear to me I had been lied to and that, despite having lived in one of the most diverse cities in the world, real food from those countries are not offered at almost all of the restaurants. Italian restaurants for example, in all of Manhattan, there are only 3 restaurants that serve real Italian food. And they aren't popular nor have they made a name for themselves in reviews, social media, etc. It's mostly the gimmicky or celebrity chef restaurants that make the name with their cream in pasta and the like. I'm grateful for the friends I've made in NY who are directly from all over the world who have introduced me to real restaurants of their country.
After decades of thinking I knew about most countries food, I've only started to grasp what it actually is the past 5 years or so. I was happy I've been making carbonara the right way (guanciale is very difficult to find even in NYC). Your videos confirm that I have. And I've learned additional nuances thanks to your videos as well so thank you very much for that.
The other thing to keep in mind about the US, every region and even state is very different. For example, there's a reason besides a few pockets, Asians don't live in the south (racism). So people in the south don't get to experience real Asian food as a result. I have not seen a German restaurant make German food the right way. I have always thought German food was dry and disappointing as a result. It was my "aha" moment several years back that every mom, aunt, grandma from every country makes the best food and blows restaurants out of the water. There is more soul, history, culture, love in those food. So I started asking people from around the world to share those recipes with me. I have made German Schweinebraten with her family's recipe and she told her mom that mine was better than her's (I now need to travel to Bavarian region of Germany to apologize to her mom for her having said that). I can honestly say what I make at home blows whatever is offered at restaurants out of the water in terms of enjoyment, family, and enrichment. I even consider wine pairing with what's typical of that region.
Having said that, there's another aspect as to WHY this type of food isn't marketed. It doesn't make money. Profit margins in restaurants. If everyone made something based on real recipes, even if creative, there isn't enough to distinguish them from other restaurants forcing them to compete by lowering pricing. This is where celebrity chefs come in. This is why investors like putting money in those. This is why most Americans don't know, are uneducated about it, and vehemently lash out at people trying to enrich us like you. They don't want to admit they have been lied to, that they've been duped. We as Americans forgot what made us great. The influx of ideas from other countries and the incorporation of those ideas to improve our country. Instead of that we now have a more insular (if you don't like it, leave) which puts us back to the Stone age.
Please keep that in mind when you are reading these comments from the misinformed. I hope it also gives you renewed strength and vigor to continue what you have started. I would LOVE to see more videos of carrots regional Italian dishes.
Your equivalent for Korean food is maangchi's channel. For Japanese good I'd recommend "Japanese Cooking 101".
Kenji's channel as you know is great for learning techniques based on the scientific approach on a more biochemistry perspective. Alex approaches it more from an engineering/physics perspective.
It would also be great if you could introduce various wine pairings. I've found for example gragnano is made right next to Napoli. I have tried it with Neapolitan pizza (Keste is the best in NYC for real Neapolitan pizza) and it goes amazingly with it. It's my understanding beer is more typical but give Gragnano a try with it. I think you'd be happy with it.

If Italians don't like Italian-American food, that is fine, everyone has their preferences. Personally I like cacio e pepe much more than mac and cheese, but I also love a good plate of well prepared spaghetti and meatballs because in my opinion it's super tasty. If you don't share that opinion, that is fine too, but I don't understand people who so angry that there are other people in the world who like Italian-American food.

I labor under no delusions. I understand there’s a difference between Italian-American food, and authentic Italian food. You know what? You can like both.
Americanization of ethnic food happened because when immigrants came to the United States they didn’t have all the ingredients that they had in the old world. They had to improvise with what they had. So they substituted. I love Spaghetti and Meatballs. I learned how to make it from a second generation Sicilian. I use ground pork, beef, and veal, fresh oregano, fresh basil, eggs, and minced onion. The sauce. Fresh Roma tomatoes, and always fresh Italian herbs.
Now if I go to Italy am I going to expect to get Spaghetti with Meatballs, or Meat Sauce? No. Am I going to get a pasta with bolognase sauce? Yes!
Don’t get stupid. Don’t argue over food. Don’t hate on one food over the other. Enjoy the variety of options we have. Understand that recipes changed not because they were trying to disrespect their culture or traditions, but because of the situations they found themselves here in the New World.

I'm glad you uploaded that video. I cook for myself and my wife and friends. I believe that the closest thing to any culture is that culture's food and should be held sacred. I have no problem with people creating fusions but, if I ask for spaghetti carbonara I expect the traditional italian dish and only that.

There is nothing better than authentic Italian recipes cooked with fresh, authentic produce, made by hand and with love for the dish and the people eating it. I may be a caucasian Aussie but I had the privilege of living next door to an old Italian woman and her husband for a decade during my teens. I still make her recipes, unchanged to this day. The invites over for dinner or lunch were never turned down 👍

I’m Italian American and I have seen these videos before. They are funny. There are some good Italian restaurants here in the states.. I grew up in NY going to Italian family owned types of Italian restaurants. However there are chains here that are not true representation of authentic Italian food. Examples like Carrabas or Olive Garden, Pizza Hut lol. I have traveled a lot throughout the world and eaten many different cuisines. Unfortunately the USA has many unhealthy horrible food options like fast food, chain restaurants etc. Just my observation
We have the same situation in South Africa and it applies equally to Italian, Greek, Portuguese. The best places are the mom and pop joints. Real honest food
surely there are some Italian restaurants faithful to what are the Italian culinary traditions, but many others are not, and this is what I would like to make people understand! It’s better to make a nice plate of pasta at home than to go in restaurants that have nothing about Italy! 🤷🏻♂️

Vincenzo I love your videos they educate me about Italian cuisine so that I can recreate it at home. Sometimes I want meatballs or an American Alfredo and that is great. But sometimes I want to recreate a perfecto carbonara with guanciale like I am in Italy and that’s when your channel inspires me. Don’t listen to nasty comments people are never happy. My neighbor is Italian and he is really proud of his heritage and most of all, the food!
He really taught me well how to cook REAL carbonara and pretty much, I got hooked into it and never went back to creamy carbonara.
Is just that food has changed when it moved out from country of origin and adjusted to "satisfy" the taste of people abroad.
It really makes me sad that traditional food has adjusted and looks nothing like traditional food that you used to eat when you were young.
However, the origin of food never changes.
People hearing the word "carbonara" or "pizza" they can always think of Italy as the food of origin and they already did their job, spreading Italian-ish cuisine and spreading Italy's fame of food to world. (I prefer calzone over pizza :D)
Is just that they never tasted the real traditional style.
I think you should keep making great videos and show us how the real cucina rustica is made and keep teaching us how to make one.

I made carbonara following the authentic recipe recently. Just spaghetti, pecorino cheese, eggs, pepper and pancetta(I couldn't get guanciale). It was so good. Although I was tempted to add garlic. I think it would make an already great dish it even better.
I do have to say that even if a dish isn't authentic Italian but just Italian inspired it doesn't mean it can't be good. Fettuccine alfredo isn't authentic Italian but it's delicious. Especially with chicken.
I see nothing wrong with blending flavors from different places.
To me, at first i didn't like carbonara at all because i ate cream version. One day I try to make as authentic as possible. Not use cream. Find the best parmazan(unfortunate i can find only fake one) and then i had it it change my espect to italian crusine.

If I want to eat Italian food then any cook preparing my meal must have some information about the genuine heritage of the dish being prepared. The same can be said of Chinese food, or any of the major cuisines throughout the world. Of course the skills needed to prepare such foods can be taught, replicated and, in some case, used as a base for creativity. This is culture; everything is downstream from culture.

Whatever happens, please don't stop making cooking videos - it's so refreshing to see someone who is passionate about food and truly believes in what they are doing. I use your channel for recipes as well as several others (boun-A-Petitti is another great one) and the one thing that they have in common is that there is no rubbish used... everything is made from fresh, unprocessed ingredients which ultimately leads to tasty, healthy food - what's not to like? Stand up for what you believe in - only the small minded people are going to complain

Vincenzo: I'm an Italian American who, last year, visited Firenze and Rome. I fell in love with traditional Italian food the way it's made in Italy. While I still like some of our Americanized versions (and I occasionally make some of my own Italian American family recipes) I have now desired to learn the original way these dishes have been prepared and served. It comes from a desire to connect with my roots in an authentic way. Thank you for your channel, and thank you for your commitment to original traditions. It gives many of us an opportunity to try authentic dishes prepared the way they have been for centuries.
Your story sounds similar to my dad's (also Italian). He left home when he was young, travelled the world, had a passion for cooking (which he passed down to me). His dream was to work on cruise ships as a chef though he ended up cooking for local communities instead. Some of the communities where he lived were quite poor and his skills were much appreciated: his knowledge of how to combine few seasonal ingredients to make a tasty dish came in handy. This was before the internet era so he never became famous but he was well liked as good food always has the ability to bring people together: it's an international language! Most understand this basic principle and love what you do. Unfortunately the internet brings out the worst in some people. You are right to make your position clear but from now on it's probably best not to pay attention to hateful comments. Anyone with an ounce of intelligence can see that you are passionate about what you do and just want to share that passion with others.

I appreciate your honesty. I grew up in Holland (bad cuisine) and Belgium (fantastic cuisine), and I am currently living in Vancouver Canada 9a well balanced fusion cuisine). Personally I have had my best meals in Italy. So I agree with simple basic ingredients that provide the ultimate flavours provided these ingredients were assembled properly. I love watching your videos and use them to emanate the real Italian dishes. Keep up the good work and the friends you think you lost, well I believe they are lost.

Just a Q. There is a Austrian dish called Käsespätzle. It is a a specific „noodle“ mixed with cheese and onions. Does this recipe belong to Italy because it is basically also cheese with noodles?

italian food is the best because they use restraint when seasoning so you can taste the beutiful ingredients. im sorry i love all food but when you dump 50 spices in something i cant taste anything underneath. harmony .italian american pasta number 1 problem is most people cook the pasta and sauce completley seperately and then combine on the plate they do not marry like this. 5 to 6 ingredients max per dish and you cant taste them all, my 2 cents sorry i cant spell

Italian food is absolutely incredible. Video was a laugh. There was a video from "Globe Trekker" from like 15 years ago where the host ate 'Sunday sauce' at an old couples apartment in Naples. Looked like one of the best dishes ever. Simple and homemade.

As the son of American immigrants, and as someone who lived in Italy for 10 years, I wholeheartedly agree with your comments, because as food cultures get transplanted to other places, they necessarily get modified, because of the availability and quality of ingredients, because of the influences of the local cultures, even because of the changing tastes of immigrants themselves.
With Asian cultures, we have modified our food in every country we moved to, and each tastes different from the other. For example, I find Italian-Chinese food oilier, subtler in flavor, and the rice like insalata di riso, to accommodate Italian tastes. Is it authentic Chinese? Yes and no. As much as it follows the basic principles of the recipes, it is also its own unique cuisine.
In the same way, I find that there is a noticeable difference between Italian and Italian-American cuisine. For example, I find Italian sweets and sweet products such as Nutella, far sweeter here than in Italy because Americans like things sweeter; Americans add cream, butter and milk, to carbonaras because if the influence of northern European cultures and because we enjoy those heavier, creamier textures; and we tend to add tons of garlic to Italian dishes, whereas in Italy, frying then discarding whole garlic cloves is sufficient.

Unfortunately, we cannot buy Guanciale (sorry if I write it wrong) in Croatia, but now I am ordering it from Italy. Luckily, we can order everything on-line.
