October 2014 - wish we can go back to those days but Daddy Jack was great and his dishes were always mouth-watering, especially this rollatini. Pans are still the same, shot the video at his first restaurant in New London, any yet his videos will always be timeless. ❤️
SOOOOOO AWESOME!!! MY HUSNAND AND I MADE THIS A WHILE AGO AND HAVE BEEN MAKIN IT THIS WAY EVER SINCE. I ESPECIALLY LOVE THE ADDITION OF PESTO AND CREAM SAUCE IT BRINGS THE WHOLE DISH TOGETHER. THAT FIRST BITE IS LIKE WATCHING ANGLES SING. I'M SUCH A FAN THANKS AGAIN JACK!!!
This looks so good. I love eggplant. Thanks for showing me how to cook it probably. I would make it an entree. Thumbs up my friend. Thanks for teaching me Daddy Jack!
GREAT job Jack. My wife is not into the red sauces, so I think I will make the dish only using a garlic cream sauce. Thanks again and we are looking forward to seeing you on a TV series. Cook'in wit da blues!!
That looked good Jack. Josh said no on the Cream Sauce but I say yes. Instead of the Parmesan I would have used Gorgonzola. But that's just me. Either way that was a fine dish.
Wow! I agree the white sauce isn't necessary but the rest of it sounds like a ambrosia in your mouth -- many times better than recipes with 10 times more views. ( I guess it goes to show that most Americans like plain food -- which is a shame if you ask me.) I used to live in Newport, RI so I know the area and New Englanders have among the most discriminating taste buds of anywhere in the country.
I dunno y i was born "arab" i guess its the closest thing to an Italian per se. Love Italian peeps and food. cheers . i will b doing this for my lady thats for sure. thax for the video . and in regard to your "too much sauces" i say to u. life is too dry, everything else needs to b extra sauces sir.

I'm crying now thinking he's gone but thank God someone filmed him
10 years later he still brings a smile to my face. Seemed like such a nice man, I would have loved to cook with him.
I love his honesty & probably why he is successful , always tries it himself before serving the customers

I have a secret no one else seems to mention about eggplant. Pick oblong eggplant even on both ends, not bulbus, and you will find no seeds.
Makes everything look easy lol.
Great chef.
Looks delicious Chef
Looks delicious!! Going to try making it but making the inside with a little Crab meat.
When he says but you can tell he's thinking family.
