Aloo tikki is a famous Indian Street food that will have some sort of filling on the inside and served with mint chutney, tamarind chutney, yogurt and a variety of savoury namkeen sprinkled on the top. But my mom used to make these plain ones for us when we were kids and we loved to eat it with ketchup! Fond memories :D

The Portuguese brought it with them in the 1500s, so it is fairly new to the subcontinent. So I'm assuming every country where potatoes grow naturally would have a similar version for centuries. I baked it in the Pan with enough oil and they came out so good! I used half potato and half flour I think... The consistency got better when I used more flour..

Hi Lisa I have a food that I think u should try it’s called plov and you can make it like this :) Step 1: cut onions and carrots into carrot sticks Step 2: get 3 garlic bulbs and peel the skin Step 3: cut ur meat into medium pieces (doesn’t matter what kind) Step 4: put oil in a big pot on high heat and then add ur meant until golden brown Step 5: add the rest of your things in there (Spices): paprika black pepper salt and a little bit of hot sauce add with water Next you add rice 🍚 And then wait until ready And then you have an amazing pot of delicious plov 🤤🤤🤤🤤

One of my all time favourite foods growing up were ‘tuna burgers’ which were basically these but with tinned tuna, spring onion and sesame seeds ( and basically anything else in the fridge) mashed in. Have them on buttery burger buns with sweet chilli or sriracha. Honestly I still drool over the idea

You should try century eggs. They’re cured duck eggs that turn black as a result of the curing process. They’re really pungent and have a strong umami flavor. I buy them at my local chinese supermarket. I love them over a bowl of congee.
Lisa, this is similar to gnocchi. What I do to make it more consistent with less flour is to try using a potato with more starch, and bake it in the oven. Or, if cooked in water, ill drain the water when done and let just the potatoes in a low heat for a couple minutes to evaporate the water that got inside the potato.

you can add semolina or breadcrumbs to make the binding even better. also it will create more crusty coating
