I'm thinking: melt some butter into about a cup of panko bread crumbs and sprinkle on top before baking. The bread crumbs will darken and give the top a bit of crunch to contrast the texture with the casserole.
Sliced up two small sweet onions, sautéed in butter, removed from heat and then added 1 cup panko breadcrumbs and tossed. Lastly, I put onions and any loose panko on top of the casserole. It’s in the oven now.
Hi Dave I tried this recipe with a twist. I added 1 small onion and two cloves garlic and did the rest to your recipe. My family absolutely loved it. I did serve it with mixed steamed vegatable with a little butter and salt and pepper. They loved it. thank you Phyllis Baker

As a Chef, I'm thinking parboil the potatoes, add green onions, a touch of rosemary, and as pinch of thyme. Mix in all the cheese and top with crushed corn flakes for crunch. It won't do much for the watery texture, but it will increase the flavor dramatically.
Adding sliced potatoes might be another option too. You can totally do a lot more with this recipe. I am going to try it and serve with brown rice and steamed veggies.
I love your recipes because they are easy and tasty with just a few ingredients. If I have other stuff it gives me a good base for getting creative, but it can still stand on its own if I'm short of ingredients. We had this for dinner. I didn't have the soup or shredded cheese so I used a sauce that I mixed up using dehydrated cheese powder. I added a little onion and garlic powder. Thanks! It was very good!

Well, I made your recipe today. It was a hit. I had to change it a little; I didn't have enough sour cream so I substituted some cream cheese. Sour cream and cream cheese combined was still less than a cup, which made the casserole a little thicker which wasn't necessarily a bad thing. Also, I had some white mushrooms that I sliced and added to the mix. Since I used leftover rotisserie chicken I had a bunch of chicken skin. I fried 3 strips of thick-cut bacon till crispy, set it aside, then fried the chicken skin in the bacon fat until the skin was nice and crispy. I sprinkled crumbled up (actually cut up with scissors) bacon bits and chicken skin bits on top of the casserole, adding a little crunch. It worked out very well. Thanks for the recipe.
I made that for dinner today without the chicken. And I substitute sour cream for heavy cream. I also add garlic powder, onion powder, and Lawry's seasoning salt. Very delicious. Thanks for sharing.
I tried this casserole and the potato's were on the raw side. I strongly suggest you par boil the potato's so they come out
nice and tender.............
How long should I par boil before adding them to the casserole dish? Until they're soft?
OR MAYBE EVEN TRY PUTTING THEM IN THE MICROWAVE FOR A FEW MINUTES.

This is missing some green peas & carrots; maybe some broccoli or spinach - extra mushrooms, too. Otherwise, the basic casserole idea is delicious. I'll give it a try and let you know how it turned out.

Diane Milligan , I thought so too. I will add frozen cauliflower (partially unfrozen, cut all. And frozen peas). Crockpot it and add cheese and cream of mushroom soup. Serve with cheese over top if wanted. Having company next weekend will let you know how it works out. I 💘 to play with recipes. Sometimes I fail, but it is fun.

I recommend cooking the potatoes half way before putting into casserole dish. I added egg noodles and substituted sour cream for greek plain yogurt.
Alien is absolutely right on this. I made this casserole and the potatoes never cooked fully. Other then that it was very good. I turned the rest of it into soup by adding some chicken broth so the potatoes would cook.

😊It looks good! I would use cream of CHICKEN because I don't like mushrooms. My mom made this stuff alot, sometimes using potatoes sometimes using rice. She also substituted ground beef for chicken. It fed a big family well! Thank you for sharing!
