Please correct me if I’m wrong but I don’t recall that red color being an original color of the 57 Chevy. I owned 3 of them back in the late 60s when I was in high school and that’s going to be one fine car when you’re done. Thanks for sharing.
One thing that may be causing your front fender fit problem: at least on my car, the fender front at the lower splash pan fits BETWEEN the splash pan and the curved filler panel, not in front of. I'd send a pic if I could.
Imagine how much more difficult it would be to install the fenders if you had included the anti squeak foam padding. Ask me how I know. I swear that the only way this front clip could be neatly assembled is on a jig which I suspect is how the factory did it.
It sure would have been tougher. I went back after the fact and cut strips of rubber and stuffed them between the inner and outer fender. Still not easy

You are correct. This car was originally matador red. We repainted it in hugger orange.
