Oh, I love mead so much! In fact, other than your beetroot chocolate orange wine I just had to make immediately as soon as I saw it, and the Sangiovese grapes I've just started fermenting since I was so lucky as to be gifted 100kg of it by a great friend of mine from Italy, all of my demijohns are currently filled with mead; 10L of rose petals mead, 10L of mixed berry mead, 10L of fig mead, 5L of blueberry, 5L of elderberry, and 5L of cherry and black currant mead - spiced with cinnamon as it enhances the cheery flavor. In the buckets, just started, I have those grapes and apple & pear mead which will be spiced with cinnamon, cloves, allspice and nutmeg in the secondary - making this one from my own apples and pears, has become a yearly tradition in our household. The one I'm making now will be for next autumn/winter and the batch from last year is ready for this year's holidays. I've already opened a bottle while I was brewing - as is the way! :) Cheers!!

I did try to make a hot mead when i got into this hobby, but first time i did know so little i dumped half a kilo of chilies into 8 litre brew. Yeast was so offended they didn't even start :D Though sometimes i wonder how it would taste, i do enjoy a hot brew even if it makes me snotty and crying. Though personally i prefer 1 to 3 honey to water ratio, usually makes it semi-sweet with ale yeast, and semi-dry with wine/mead yeast. With linden honey being my favorite, though probably not for the hot mead. The last one i made i think was 2 litres of linden honey, just below 6 litres of water and half a kilo of strawberries with a third of a teaspoon of lavender. Can't wait for it to age :)
Almost a Welsh metheglin, my wife’s favourite. I’ve had mixed results with that Tesco honey. Sometimes it’s real honey, sometimes clearly not. It’s sourced directly from China now, and they’ve been known to make really dodgy honey substitutes.
Really not for me, I really really don’t like chillies jalapeño is too strong for me. However I love plain straight mead , honey water lemon juice and yeast , I’m going to try some fruit infused meads next year, so going to have a lot of fun playing with them. Have been playing with tea and fruit tea wines this year, some awesome some not ( top tip .. avoid lapsang souchong) but fun to experiment. Am doing a strong ribena wine tomorrow, a 5 gallon brew. Should be great for early next summer. Have you ever done a ribena? If not I heartily recommend. A 1.5 lt bottle makes 5 gallons for a light wine , I’m using 3 for a rich mix that can be used in a spritzer in the summer and still keep its flavour. Cheers 🍷
