    I made this last night and it took way way longer than an hour and 15 minutes. I set it out an hour before putting it in the oven and after two hours in the oven it was not near 140 degrees internally. It took almost three hours for a 5 lb roast. I ended up frying some pork chops and we will eat this tonight re-heated. We did take a taste of the meat and vegetables...it was delicious...hope it reheats well!

    This was the most excellent rack of pork and the most tender pork I have ever cooked. It’s a keeper

    I’ve never made a Rack of Pork in my life but I made this for Christmas Dinner and OMG it was sooooo delicious!!! I didn’t have time to add the celery root and I didn’t have Rosemary, but seriously this is one of the most delicious things I’ve ever made and/or tasted!!! Thank you so much!

    I'm confused by the temperatures. Firstly he says 325 degrees then he says 140 degrees???

      325 degrees is the temperature of the oven, with the goal of cooking the pork until it reaches an internal temp of 140 degrees.
