Perfection today, again! I think I didn't add enough bicarbonate though. Happy accident as the bottoms were beautifully flat so no trimming. Yes, greasing and dusting the moulds did the trick, the cakes just slid out. Used lemon juice for the icing as suggested, gives a nice zing with the rest being so sweet. You are my new baking hero John!!

This looks like a delightful little cake. Well, the only change that I would make is to use less sugar. So I would probably put flaked coconut on the outside that hasn’t been sweetened. I am not very good with eating sugar or chocolate as of late. They call it intolerance. But I have learned if I buy really expensive cocoa powder from the Santa Barbara chocolate people and I mix up my own chocolate I can have a little bit. So what I do is mix 1 tablespoons of coconut oil with 1 tablespoon of maple syrup. Then I mix in 2 tablespoons of their red vegan cocoa powder. So it actually makes like a chocolate shell. That’s what I would use on the bottom with unrefined coconut oil so you could taste more coconut.

I've never seen or heard of these and they do look delicious. As a kid my mum made a coconut bu which was a pasty case filled with jam and a coconut mixture. I can't remember what they are called but they didn't last very long :)
Not a big fan of coconut and lemon, but I can use orange peels and dark chocolate thank you… icing know I do icing culture sugar whatever it’s called and then dark chocolate dip so thank you for the base

I need your opinion. I live in the US and my oven only can be set in 25°F increments. So if one of your recipes says 338°; should I put mine in at 325° and go long on the timer or 350° and go short on the timer?
Just found your videos and am loving the UK staples content and was wondering have you heard of Paris Buns mainly from Scotland and Northern Ireland as would love to see a recipe video for them as have never made them successfully, thanks for the great videos.
I love a Paris Bun .. I make them occasionally (not the finest, but edible) but had to find the sugar nibs to top them with online as any attempt to 'clump' ordinary sugar failed miserably. I'd love to see John making them too as my version could do with a bit of help :)

Hi John, tried these yesterday and they are delicious another great recipe. I have tried a few times to make some of your bun recipes without success. I have made the hot dog rolls successfully but not the others. I have been caught out a couple of times leaving the proofing of the buns on the tray for hours longer than the recipe and used a flat tray without sides. The dough ends up flat as a biscuit, edible and good tasting. Does the longer proofing allow the dough to spread too much? Does using a flat tray rather than one with sides cause the dough to spread too much if left too long?

Anyway, I thought of you when I was in Savannah Georgia a few weeks ago. There was this little British-themed shop that sold meat pies, pasties and other stuff. Theres a substitute for chocolate i believe its called carob?im not too sure about it but ive seen it used for dog food.

Delicious! I personally would toast the coconut, as I'm more a fan of the nuttier flavour. Though I guess then they'd be dirty snowballs 😅

That's a very strange oven thermostat, Julie, you sure you're operating it right. But personally, I would go hotter and shorter.

Over proofing is the reason they are flat, the dough collapses when too much gas is emitted from the yeast.

Haha! I wanted that name to follow the other one that was on there that was "Hello Again My Name's John" but I guess he dropped off. It was perfect because they were alphabetical.
Anyway, I thought of you when I was in Savannah Georgia a few weeks ago. There was this little British-themed shop that sold meat pies, pasties and other stuff. Now that I know how good they are I'm going to go back through the archives and find those recipes, especially the curry chicken one. I especially liked that one.
What did your Mom use to shape them before silicone? Was that metal pan you showed a British Snowball pan? They do look good!
