    I have had both prosciutto and iberico, iberico is my favorite. You can taste the black acorns in the meat. Part of the reason Americans don't know about it is because of the importation tax on meat products.

    It is a nice video. However the information is not 100% right. The ham with the green label (Cebo de Campo) was not in an acorn diet. Only the red label and the black label had acorn in part (no all) of its diet. They only eat acorn the las 4 months before they are killed. Those 4 months are called La Montanera. The age of cured has nothing to do with the price. All ibericos are cured between 1,5 and 2 years. You don't want to buy a ham that is too cured because it'll too dry and difficult to cut because is too hard.

    If you're a fan of Jamon but refuse to pay the insane prices I can honestly say the best Spanish Serrano is up to par with the lowest grade Iberico, and way, way less. My preferred brand is La Hoguera Serrano Jamon, aged 18 months, available in 100gm packages with plastic slices separating each piece. With all Serrano Jamon always go for the cuts where the fat is the most evenly dispersed among the meat, and if you prefer a delicate taste simply cut or slice off 1cm around the edges, that removes the mold/salt/rancid fat. I always do that.

    i live in spain and i just ate like a chunk of spanish ham cus here usealy during christmas most familys will get a whole legg and i like it thick tbh like my slices i have no idea people pay like 4k here a leg is like 80

      I am Spanish, and of course there are hams for as low as 40€, but real black label jamon iberico will cost you at least 500€ a leg in Spain.

      Move to spain, a 5J in the US is $1400, butbin spain it only 500€. Plus a single plate can be 20€.
      You could always buy a reasonable iberico leg which can range from 100€ to 500€

    5 jotas (brand shown in the video) is definitely NOT worth that much. And eating 2 of these legs every Christmas (I leg per week, we are a big family) I can tell you anything above $500 is completely stupid and they are overcharging, no matter the breed or food given to the pork or aging.

      You forget meat import tax in the US. And the fact that economy is different. 5J might not be thet best ham in the world but it is for sure in the hall of fame and it's a delicious, "safe" purchase if you don't know where to start, and it's probably the best you can get in the US. In Spain you can talk to 200 factories in Huelva or Salamanca and come out with 200 different recommendations. Everybody wants to sell their own product, and the good thing is probably they're all very good if coming from those areas, but some brands like Joselito or 5J are guarantee of excellent quality.

    Just because that ham has a market, that doesn't mean its the best. If you want to look for the best ham, you should go to Sardinia in the mountain villages,where prosciuto is made traditionally by hand. You should try it and you will see the difference.

    Couldn't pay me to put all that fat-to-actual-meat-ratio in my mouth or body.
    "It melts on your tongue", and goes into your body, straight to blood SLUDGE, into your veins. Ugh!
    Not a snowball's chance in that "very warm place" would I put that into my body, even if you shipped me a full, free leg of it.
    Ugh!. Gross. I cut the fat off of bacon, chicken, beef, goat, deer, steaks, Elk, fish, pheasant, Cornish Game hens... no matter the meat.
    Nothing healthy about eating animal fat, no matter how it is cooked, seared, grilled, roasted, baked, barbequed, simmered, sauted, steamed, smoked...
    Ugh!
    Couldn't pay me to eat it, even if I trimmed off all the fat personally. Gross. Eeew.

      You´ve never eaten it then. It is no different than Salmon or the fat content in Avocados. It in no way compares to what you have described.

      Quite the contrary. If you're not eating the fat then like a lot of people you're missing out of an array of nutrition and immense health benefits for the body. Too much lean meat isn't good for health.
      Also, many vitamins are fat soluble so by removing this key part, you're food will be lack lustre and you won't absorb much nutrition.
      Research "French paradox" for more information.
      Finally, the Ketogenic diet, high fat etc, reverses many a disease. Fat isn't the killer. It's the sheer volume of amino acids and sugars and food additives which cause health issue.
      In short then...fat is your friend.
