For those who have made this before: Why not use spices on the meat before freezing it? This seems rather bland.

I think they rely on the dips and sauces for hot pot meat, and the broth
You could do this, the problem afterwards is that you'll have to be careful how you make the Soup Base and the Dipping Sauce for the meat, to not make either salty.
Because the seasoned Beef would be salty
@afallenhuman I'm thinking: use the same spices he always uses. Just coat the meat minus salt. The salt would cure the meat in the freezer, probably.
Then; when you roll it, the meat gets a good coating.
