From my understanding, she executed the former slave because the master was supposed to be protected until his trial. The former slave knew she didn't want anything done until after a trial. Yes, in today's world, he also would be given a trial. It was indeed a slap in the face for how she carried it out.

That was a no-win situation for Dany. The former slave who killed the Son of the Harpy essentially confessed to doing it and explained his reason. In that culture, there's now no need for a trial.
If she gives him mercy and lets him live, it sends the signal that her friends and those in her inner circle are above the law, and executing him is going to anger the former slaves. Her huge mistake was not carrying out the sentence privately rather than as a public spectacle. There might have still been some grumbling and anger, but not to the level that doing it publicly where they all could see it. There are gradations of subtlety in leadership that she still hasn't quite grasped. Just as with Robb, she made a mistake, and wasn't prepared for the reaction to that mistake. Hopefully, she lives long enough to learn from her mistake, unlike Robb.
