Bamboo Fiber Low Net Carb Pancake Recipe - Made of Bamboo Flour, Low Net Carb And Gluten Free

- This easy recipe makes pancakes that are so light and fluffy. They are made with bamboo fiber and sweetener, so you can eat them if you are on low net carb, keto or gluten-free diet.
How to make bamboo baking flour:

Full recipe
2 large eggs
80g greek yogurt (2% fat)
30g melted unsalted butter
25g avocado oil
1tsp baking powder
1 tsp (6g) vanilla or caramel extract
40g sweetener (stevia erythritol)
38g bamboo baking flour
Steps
Heat a very lightly oiled pan over low-medium heat.
Melt 30g of unsalted butter.
In a mixing bowl crack 2 large eggs.
Add 80 g of greek yogurt (2% fat),
1 tsp of baking powder,
1 tsp of vanilla or caramel extract,
40g of sweetener (stevia erythritol) and
25g of avocado oil.
Whisk them to combine.
Add the melted butter and mix them well.
Finally add 38g of bamboo baking flour (30.4g of bamboo fiber and 7.6g of powdered whole psyllium husk) and
a pinch of salt.
Mix them to combine.
Scoop the batter onto the pan, using approximately a bigger spoon for each pancake.
Cook them on low-medium heat.
Cover the pancakes with a lid while cooking.
Cook until bubbles form and the edges are dry (about one minute and 30 seconds).
Flip and cook until browned on the other side.
Repeat with remaining batter.
The batter will become thicker after a while. This is normal because of the fiber.
My pancakes are about 3 inches (8cm) in diameter and I got 9 pieces.

These were really good. Generally rather than trying to find replacements for bread like foods, I just don't eat them. I had really been wanting bread though. I used sour cream in place of the yogurt and I took some frozen berries and microwaved them, added some allulose to sweeten and ran them through the food processor. I then warmed them up a bit and used them like syrup topping. I have used the Walden syrup in the past, but I really liked it with the berries. I'll make these again. Super filling too.
These are VERY nice, did not break apart. Been looking for a good recipe that did not include almond flower or similar..
Used coconut oil here (as avocado oil is more expensive than gold in most of Europe) - and I love the hint coconut anyway.
In the second batch I blended some cottage cheese and used that instead - even lower on the carb, he he..

One question @BambooLove - where did you find/get the ratio for the bamboo "flour" ? Been experimenting with the same here, but poor results (probably too little husk powder)..

Is there a particular reason why you used Greek yogurt as opposed to maybe Heavy cream or Cream cheese?
If you replace yoghurt, it may have a different consistency. You can use sour cream instead of yogurt to get the same consistency (the taste will be slightly different). Heavy cream can also work (you may need less of it), but I don't think this recipe works with cream cheese. 😊

Delicious however I have a gas stove and even on the lowest setting they almost burned before being well done. I have to try another cooking device
Do you use allulose? The reason could be the sweetener.

Think I've cracked these now with adjustments as my bamboo flour is defo lighter than urs so need to reduce it. They take ages tho to cook in my omelette maker upto 20 mins 2max lol in a pan they quicker but not as good. Wondered how long can last made keep chilled then toast doin that atm or even make the batter and keep in fridge for when required. 🤔
I use Zimmermann bamboo fiber (that’s a german product) and 1 cup is about 65g. (I spoon the flour into the measuring cup, and scrap a knife across the top of the measuring cup to level the flour.) So you can see if your bamboo fiber is lighter. But in my experience, using different brands of psyllium husk can cause this problem. If you use oil instead of butter, sour cream instead of yoghurt, you can make the pancake batter more runny. And if that's not enough, you can add more sour cream to the batter. Hope this helps 😍
@@BambooLoveChannelI made these tonight with Strawberry Keto Greek Yogurt and mixed the wet ingredients then the dry ingredients then combined those. The Batter was very thick and needed to be spread out to form each pancake, same as in your video.
They sure didn’t look like yours but they tasted good with butter and keto blueberry compote & a sprinkle of Swerve confectioners. Later I discovered that I forgot to put the sweetener in the batter.
And they tasted great!
Me again lol. Tried these, but half the recipe to test and it made 2 4inch pancakes as used me omelette maker. The batter was not like the video was too thick little clumpy too so had to add some little goat milk but dont think will next as came out very dense for a pancake and even tho tasted ok after toasted next day they weren't airy like inside if make sense.
You can try replacing Greek yoghurt with sour cream and butter with oil. This will make the batter more runny. I would not use any milk for this recipe because when I tried it, I did not get good results.😊
@BambooLoveChannel not got or fan of sour cream. And doesn't recipe already have both butter and oil. Yeh it's what probably made it more dense. I do have heavy cream powder could try adding that and not adding as much yogurt. Just wondering how could give em that more fluffy pancake texture.

Officially bamboo fiber. I add some psyllium husk and substitute wheat flour with this mixture, so I call it bamboo flour.😊
