    My grandmother made hoecake on top of the stove in an iron skillet. She would cut it into squares for us kids. A lot of the time we didnt have store bought syrup and she would make a sugar syrup on the stove. Along with that we would have a piece of fried fatback. We had no idea we were poor.

      My grandma raised me and my sis d she cooked like this biscuits every day goes cakes cornbread she cooked 3 times a day she was a wonderful cook

    My granny was 98 years young and I'am 56 she always taught me to save my baccon grease in a jar in the refrigerator. She called it Liquid Gold I cook alot with it and miss her all the time .Tks for the sharring love 💜

      Yes ma’am I do save my bacon grease also I always have I do use bacon grease in a lot of my food not everything all it does is flavor your granny was right it is liquid gold

      Yep bacon grease is not bad for you. The companies making all the bad food people started earing about the 1950s and on is what is killing people. All the crap they have decided needs to be man made and not homegrown is the issue. Just like the dyes they have in food these days, if you go back to when you were young and thick about it our cereals were not as brightly colored because they used natural dyes in them. Now if you get most food that is brightly colored its because they add petroleum based food dyes to everything. Even marshmallows have blue dye in them. Petroleum based same base gasoline is made with.

      @@butterflyforeve My mom always saved her bacon grease and when she had enough she'd make pice crust with it, was so flake and delicious !!!!! Green beans don't taste right without bacon grease, sometimes fresh green beans got mixed with fresh corn cut off the cob into the beans, she would make wilted garden lettuce , green onions, red radishes and would heat bacon greas with vinegar and sugar until it began to boil and pop, then it got poured over the lettuce , loved it !!!!

    Tammy, it's Tammy, when you spoke about Chris eating cornbread and milk, I just about cried. My daddy would fix his glass of milk and cornbread cut up tomato and onion in it and eat. He was one happy man. I've had him on my heart so heavy this week, I was at my treatment Wednesday, looking at my parents pictures, the doctor and nurse came in... I was crying like a baby😢😢😢😢 They didn't really want to give me my treatment, didn't think I was up for it... I had this on have a talk with the Ed m and let them know that sometimes God lays out folk on our hearts to remind us just how much we were loved. ❤❤❤

    To me, grits tastes like a cross between Cream of Rice cereal and popcorn! (I like the savory version of grits... butter, salt, pepper!)

      @@lynetteedgecomb518 Lots of butter and I add a little bit of milk when they get real thick. I cook the kind that take about 30 minutes. My wife says I make the best grits she has ever eaten. I have one teflon pot just for grits and I don't get it too hot. Teflon is safe if kept to medium heat. No sugar in grits. I put sugar in cream of wheat or oatmeal.

      @@fredwiley3731 Yes, that is just how we make them. ( I add cream and cheddar cheese when I make shrimp and grits.) Do you get stone ground grits? We found some good stone ground grits when we were in North Carolina.

      Salt pepper cheese butter and occasionally green chile.
      Save the sweet stuff for hoe cakes..then sorghum syrup.

    my grandma used to make her hoecakes on the stove. they were more like cornbread. the batter was like that of pancake batter. she would use bacon grease to fry them up. they were like smaller size pancakes. sometimes she would mix thin-sliced okra in them or corn niblets.. my favorite meal in the world was to break up a couple in a bowl and put her homemade pintos on top with some onions and her homemade chow chow (its kinda like a relish).. what I wouldn't do for one more bowl of my grannys hoecakes and pintos.

      Yeah, we called fried cornbread cakes hoe cakes. Just cornmeal, little milk, little water until batter is like pancake batter. I just made some last night to go with some soup I made. If you're running short on time to bake cornbread in the oven, hotcakes are the answer!

    I absolutely love cornbread and milk I just can’t eat it any other way. My daddy is from Rome Georgia and mama is from Michigan so glad she cooked southern style food. Thank you for the memories ❤️

    Tammy, I totally understand about you wanting your food to taste like what it is. I cook like that. I do not like overly seasoned food. If I am cooking greens then I want them to taste like greens, mashed potatoes taste like mashed potatoes, etc. My daughter in law once said she liked my "bland food". My son quickly spoke up and said "you don't really mean bland 'cause Mama's food is anything but 'bland". Cooking the way you cook is a gift that very few cooks can duplicate. It takes years and years of practice.

    I've been making grits for years, but hesitated to make them for just me because I didn't want the mess. I love making grits your way. I can even make them at work! Sometimes I add a wedge of Laughing Cow Pepper Jack Cheese. So yummy. Never get tired of watching you.

      I love that you keep saying everyone does it different, even in the south. It drives me nuts when people say everyone in the south eats things a certain way. Not everyone in the same family likes everything the same way. My Daddy loved sugar in his grits and in his rice. I think both are nasty, but that doesn't mean he was wrong.

    I Love your stories with your cooking. Reminds me of my Happy Memories of my grandmother & mama cooking. My granddad loved coffee & cheddar cheese with biscuits or on bread. M1y family was from the South so my husband just looks at me for some of what I eat or cook.

    I’ve never had grits with sugar in them. I’m not sure I want to try it! Grits are so perfect with butter, salt & pepper (and sometimes cheese).

    I love Southern cooking but I’m from Seattle. My husband is from SC. My FIL said my chicken & dumplings was the best he ever had and I would have paid 💰 for him not to say that in front of my MIL. But I fixed her grits one morning. She wasn’t feeling good. She took a bite and started to cry and said, “These grits are terrible!” 😂 Usually she’s a very sweet lady and I love her 💕

    We cook just alike; fingers in the crisco and ALL! But, my daddy insists that a hoe-cake here in KY has to be corn meal in lard. But I make this kind of biscuit all the time. You're awesome!!

    I eat cornbread and milk as my before bed snack. If it mix cornbread, it is sweet enough. If not and I make it with cornmeal etc. I add sugar to the bowl! I love some cornbread and milk! I also eat grits with sugar and milk!

    I like my grits cooked long & slow! Salt, pepper, & butter...
    When I was young, my uncle's wife would put a big nasty glob of grape jelly on the top of my grits and I would never eat them! 😝 I don't like my grits sweet...
    I couldn't stand having to spend my weekends with her, she use to chew tobacco and spit all the time and couldn't cook if her life depended on it 😂

    I love grits,I love maples flavored oatmeal…for them to be done good …you cook them to death to get them creamy… and creamy is the way they’re supposed to be cooked…why most people don ‘t cook them, because have cook low & stir constantly because they will stick to the pot and scorch and won’t be good…but they are so ooo yummy creamy…

    Sugar in grits is a wonderful idea. My uncle who was from Minnesota always ate grits in the morning with sugar, very much like cream of wheat. I didn't grow with that in SE Alabama. The only thing sweet thing my brothers and I had for breakfast was a cup of coffee.

    I’m from California, and my dad ate cornbread and buttermilk all the time! My parents were both raised in the south, and I did learn how to cook using bacon grease.

    My Dad taught me how to cook eggs without flipping them. If your pan has a lid (better if it's glass) ... just put the lid on after you put you eggs in the pan and season them. My Dad typically cooked the eggs when I was growing up. I think he still does.
    I'm wondering why you put sugar in the grits.
    My Grandma (maternal) would put a strip of bacon or a piece of ham in stuff like green beans. She was from Clifton Forge, Virginia. Grandpa (maternal) was from Rome, Georgia. They retired to Waynesboro, Virginia. I'm from Vienna, Virginia and live in Reston, Virginia. I'm Andrew.
    My Momma hated it when I asked for her meatloaf recipe because she had to measure stuff. lol. And she gets mad at me for not measuring when I make my marinade. lol.
    Also ... my Momma passed a family cobbler recipe on to me. My understanding is it came from Grandpa's stepmother. I've made it a few (ok more than that) times. I also think Grandma used to talk about hoe cakes. But I had no idea what they were until now. And I have a cast iron. I'm going to give this a try.

    Hi, Tammy. I just got that same pan and I love it. I’m a pan freak, and I am nuts over it. Never thought I would be because I thought it was an informercial thing. I went back and immediately bought another one because I was so thrilled with its performance. Plus, the hammered copper is sooooooo pretty hanging in my kitchen. I’m so glad you like it too. It was about $30 at Walmart. I see it at Bed Bath & Beyond but the coupon wouldn’t work for it. I only wish I didn’t already have so many pans already or I would have gotten the whole set.     I use bacon grease as the fat to brown stew meat and if I an making pinto beans and don’t have enough bacon or ham hock to season I will add a little bacon grease to up the flavor. I am a Southern cook and try not to use bacon and butter with everything, but it is so much better that way!

    When I was very young my dad used to eat cornbread and milk. So of course I did.
    Haven't had that in years.
    Also, I just recently had cheese grits in a restaurant.
    They were so good, never had them before. Mmmm it all looks so good! 🌞 It's almost 12 midnight, and I'm hungry from watching y'all! ♥️

    For those of you in Europe the comparable versions of Crisco is, Trex, Flora White, or Cookeen!! So YES, you CAN make biscuits and hocakes!!!

    My grandma did put slices of bacon and a small amount of onion in broad beans, in corn and beans, and in turnip greens. I love bacon grease to make fried eggs more than anything !!!
    I have a friend whose father says he needs bacon grease to digest his food! That does make me queasy!

    I've always use butter to make my biscuits. That's how my Mama Pearly taught me and they are beautiful. I bought the Swaggertys Sausage and it's a little on the sweet side for me. Gonna take a while for us to eat the box. Wish I could ship it to you. :) I have tried grits several different ways and I just don't like them. Now my son loves them. He has to eat them out cause I don't buy it. Waiting to get some blackberries so I can make your recipe.

    I have used oil making self rising flower but I recommend using a stand mixer when combining or a hand held mixer. Another great video

    Corn bread and milk were eaten frequently at mamma’s and some times daddy added grape jelly or steens syrup for a sweet dessert

    My grandma & Pawpaw used to breakup cornbread in a cup or glass & mix it with sweet milk or butter milk.
    Us grandkids were like yuck...until I tried it. 😋
    I introduced my husband to it & he still thinks I'm a little crazy. ☺️

    My brother makes this and he just calls it pan bread.
    And his immune system is different than mine😂😂 but his entire life if his sweet milk is turning hes happy. He will set that milk aside until it lumps completely up and he makes his beloved pan 🍞.
    I will say that bread is AMAZING. LUV U TIM.

    We love Golden Eagle table syrup. We live in northeast Mississippi and they only sell it at one locally owned supermarket here. We like to mix it with butter and put it on our biscuits. I have made several of your recipes lately, things I've been making for many years myself just to see the difference. We do things very similarly, love to change things up though. Keep doing what your doing. Love your videos!

    I am from Massachusetts snd we never had grits. When I was 37 me and my husband and 2 kids mived to Virginia. We went out to eat for breakfast and the waitress brought out grits and we all looked at each other and said "what is that ? " it looks like cream of wheat cereal and it taste like that too.we never did get to like grits. Nor greens with fat in it.

    I’ve lived in the South for 35 years but don’t eat grits. I do drink sweet tea but it took me several years to like it. Everyone is different! I love watching you cook and am desperate to made a decent biscuit!

    I was watching this video and I saw where you started your TH-cam channel so your kids would have something from you about cooking. That is the exact same reason I started my TH-cam channel. My kids don't watch it now at all but when I'm gone I hope they do cause I have almost 1000 videos on there. Lol. Also, y'all were talking about fat meat. My grandma used to fry that up every big meal she cooked and I can not find it now. She called it fat back and oh my gosh it was so good fried up and put on a good piece of cornbread with butter and fried apples. Omg if I could find someone that could make me that like she did today... I'd cry my eyes out. My grandma taught me everything about cooking. But, most people can never cook something like their grandma's. You can do it exactly like she did but it will never taste as good as when she cooked it. Thanks for all the memories you make me think about from my days with my grandparents. Have a great week!!

      There is nothing better than a biscuit with a hole punched in the top, pour some grandma's molasses in the hole & let it saturate all through the biscuit & bacon on the side. Yummy!

    Hi. Cooking on high heat like you do, those Gotham pans will warp easily. Cast iron is better for trying eggs. It can warp but it takes time on extreme high heat. You'll be placing Gotham in the back of cupboard because it loses its nonstick quick. Maybe cover thick sausage patties with lid, less popping grease n steams a little. Peace to you and yours

    I was always a fan of Jimmy Dean sausage,you just had to cook it low to keep it from burning.Tried Swaggerty's one day because it was on sale.Holy cow this sausage is amazing!!!

    This looks so delicious! You persuaded me to try the swaggertys sausage patties.. Found them at Sam's club. oh my goodness so delish! I did them in the oven and they are so tender and yummy. We are hooked!

    My husband said his mom would take a left over biscuit poke a whole in it and pour syrup in, and that was his snack in the afternoon. Then he would go and pick cotton. Now that was true southern living. I never had that. My mother cut the biscuit open and spread butter and jam on it. And I did not go pick cotton.

    My mom used to make biscuits on the stove top too. Also, we would have cornbread in the morning with our eggs, over easy. The cornbread she made had no sugar in it. I think I'll make some cornbread and eggs real soon.

    Hey sweet Tammy and Chris, Oh my what A Delicious meal. Chris said, I wish y'all could smell the Hoe Cake. Honey I wish I was there eating the Hoe Cake♡♡♡ Everything Looks Perfect. My Mom used to make homemade biscuits or cornbread every day when I was growing up. She is A Wonderful cook too♡♡♡ Her Mother-in-law taught her how to cook. Her Mother wouldn't let them cook. She was afraid they would waste the food. Thank you and Chris so very much for sharing with us♡♡♡ I want to fix this Delicious meal. I Love fixing this when I don't have alot of time.     Next time you make biscuits try 2 cups of Self rising flour and 1 1/2 cups of Heavy whipping cream, mix well together to form a ball, then put on floured surface and knead a little, flatten with your hand to about a inch to an inch and a half cut out, place on greased pan close together, dab a little of the heavy cream on the tops and put in oven at 400° for 30 minutes or until golden brown, happy baking 🤗🤗

    We buy the “Old Folks” sausage it’s in the frozen section in a white and bluebox. It’s the best I’ve ever eaten besides McDonalds sausage..lol

    Hey you guys, everything looks great but I can't do grits. Tried many times but I just don't like the taste. I cook breakfast for supper all the time since it is my favorite meal. Love you both.

      The trick to grits is to cook them a long time maybe 30 minutes.

    I would never put sugar in grits. But "to each his own." Lol :D (Just from an Indiana Country Girl!) ;) And yes...I agree with most other "Country Folk"...bacon grease in ANYTHING, makes it better! :D

    Your Gotham pan is now bowed in the . middle. Always cook over your heat source (middle of the pan) instead of around the side. You can still use it for meats and lots of liquid like gravy. Even scrambled eggs but you'll have to keep moving the eggs over the middle. Use a truly flat pan for fried eggs. Sorry hon! Sandy

    I can't say I've ever had a hoecake but I love grits. I'll eat them with cheese and butter, (shrimp &grits is a favorite meal) and I love them with brown sugar too.

    To replace buttermilk in a recipe, combine 3 measures of sour cream with 1 measure of water or milk, and whisk the mixture until smooth. So, to replace 1 cup (240 mL) of buttermilk in a recipe, combine 3/4 cup (172 grams) of sour cream with 1/4 cup (60 mL) of water or milk. Don't stress and worry over substitution because modern buttermilk isn't traditional buttermilk anymore. Real (or traditional, or old-fashioned) buttermilk like our pioneering ancestors made is a thin, sweeter product, with an acidic taste and is a by-product of the butter making process. While cultured buttermilk is a thick, creamy product, sort of like a watery, thinned sour cream, that tastes tangy and buttery and is just milk that has been pasteurized and homogenized, and then inoculated with a culture of Lactococcus lactis or Lactobacillus bulgaricus plus Leuconostoc citrovorum to simulate the naturally occurring bacteria in the old-fashioned product. Ran out of sour cream but have plain yogurt instead? Use that in place of the sour cream.

    I’m with you Tammy - Swaggerty sausage is the best. We used to buy it at Piggly Wiggly but when it closed I had a hard time finding it. I believe I found it at Sam’s and sometimes Kroger in the frozen section. Nothing tastes like it.

    I'd never put milk or sugar in my grits! I don't like sugar in veggies either. But love your videos.
