My husband and I have been vegetarians since the 1990s. That doesn’t stop me from cooking Filipino food, but I always use tofu or dried soya chunks instead of meat. I also always have vegetable broth or cubes in the pantry for flavor. I make pancit bihon using grated carrots, grated celery, and cabbage I prefer napa cabbage), along with fried tofu, and always use the vegetable cubes to add flavor. I make pancit canton using the same ingredients but in larger chunks, plus I use dried chinese mushrooms and fresh mushrooms, and of course my vegetable broth or dried onion soup. I make soup tinola using fried tofu, sayote (I don’t have green papaya in Canada), spinach, and a little bit of some sotangon (bean noodles). I also make vegetable lumpia, eggplant adobo or eggplant (beefsteak) using soy sauce, lemon or your calamansi. I make afritada or menudo too. You should try it sometime.
