- It is official the new "BEETS" are out!
I can't believe how realistic this one turned out to be; creating an illusion with tasty soft cake components is always challenging.
It's composed with a fresh raspberry mousse, a soft raspberry and yuzu compote, a crunchy red sable, a raspberry cremeux and a beet sponge.

Yeah it’s full on confectionery with different layers and ingredients, that would actually taste good, rather than just cake and icing with fondant sculpture outside.
@@kutanra i love sideserf, no denial she’s some real talent but i prefer amaury out of this reason alone. sideserf just feels like a talented sculptor who uses anything that’s similiar to regular sculpting materials as a medium for her art. amaury however, genuently feels like a chef who models his pre-existing recipes into items.

Love Natalie’s work but what he makes are deserts. Its more complex and has many different type of layers. What she does is cake.

Amaury is all class and style. He's a genius on a whole different level. I've never seen a chef who is talented like amaury is.
His story about how much of his life he 100% dedicated to learning the craft, is inspiring to say the least and is no wonder why he has become as talented as he is. Now he's teaching the craft to other people, truly inspiring on all levels.
I could imagine myself wearing those daily if they were a shade of black. They’re gorgeous and if I saw them without knowing that someone made them from chocolate I would think that they were headphones made from a different kind of material

Like the other commentor, this guy is a professional patissier :) He went to culinary school, became an executive chef at age 21 (!!!) at an incredible pastry shop, opened his own school and even has a Netflix show. Beetroot is an absolute nightmare in my kitchen and I _haven’t_ used my food processor or sieve with it.
I’m pretty sure he’s got people to deal with the cleanup. I don’t blame him; if I were that talented, I’d have people clean my kitchen too.
I switched to golden, simply because I like beets and they make much less of a mess and no one cleans my kitchen for me.
