    E beef shank. I really enjoy your portuguese cooking professionally done and in a modern style I think, my moms portuguese cooking really sucks she overcooks everything I can't eat overcooked food and is really peasant like. One thing portuguese or European chefs know better is how to cook these types of meat you rarely see these kinds of cuts in grocery stores or even butcher shops most north American cooks mostly don't even know how to cook these cuts of meets. Looks realy good though. So is that very jelatinous the next day when it cools in the fridge

    Um troque para não ter que esperar 24 horas para os grãos, feijão ou grão de bico ou afins, ficarem hidratados.
    Numa panela de pressão colocar os grãos e a água e ferver até assobiar. Ai desligar e espera só 1 hora. Estão pronto, estão hidratados!
