Ukraine's Muslims are primary Crimean Tatars, who live in exile from their peninsular home--for the first time--all over the country. In exile they have opened great restaurants that are also cultural centres everywhere from Odesa to Lviv to Kyiv where they share the food, hospitality, and cuisine of Crimea--and perhaps surprisingly, the wine, which many of them produce. They have their governing council, the Mejlis, which sits in exile in Kyiv now and led by their traditional chief. // Ukraine's Jews, from Lviv to Odesa, contributed heavily to cuisine, music, and literature--some of the most beloved Israeli and Jewish dishes worldwide have Ukrainian roots. Lviv was once the largest Jewish population city in Europe, until the Holocaust. There are many haunting reminders of their presence, but few Jews left, their legacy recalled in the ruins of a synagogue and several popular cafés that evoke the 1920s golden days. Today you'll find more Jews in Odesa, Kharkiv, Kyiv, Dnipro--and the storied pilgrimage town of Uman, which the Russians often bomb and which every Rosh Hashanah draws tens of thousands of Jewish pilgrims from around the world.
