Choux pastry is, for me, the easiest pastry to make. I use it for eclairs and ice cream sundaes; split and fill one with butter pecan ice cream then drizzle hot fudge over the whole thing - delicious.
Where are these beautiful flowers in nowadays dessert places? Instead, we have some over-sweetened cupcakes.
