@@Bea-Dubya BBQ isn't intended to be eaten in any specific way. It's how you want to eat it, like any good meal. I've never "chased" meat with sides, though I've done it many times just not specifically on purpose. You can surely eat brisket by itself, or have a fork full of cole slaw to go with it, etc. Yes, some meats go better with sides, because it helps cut through all the richness and fat, but that's another story :D

Or if you do you just showed up.
If you live in Texas and go to BBQ joints you'd know that they all serve onions, pickles and white bread.
Having lived in Texas for 58 years and BBQed for 38 of those years as well as BBQing in competitions for four of those years I have a pretty good grasp as to how to BBQ properly and what to serve with it.
Stop and think about it....why else would they serve bread, pickles and onions?

I've never had southern barbecue! But I'm in PA and that's a loooooooong way from TX. I spent a summer in El Paso when I was a teen, with my young married sister and her husband and daughter. They were a poor soldier's family so we didn't eat out at all, and when my parents were there at the start and finish of my time there, we just went or steak. Which was wonderful, of course, but I feel as though I missed something fantastic.
Great to watch you guys enjoying it, though, even if you do keep saying it's on our doorstep. We're 1500 miles away, for goodness' sake! :) Alana is so adorable, and so good. Not at all disruptive and just keeps herself happy.

I live in Pennsylvania and I don't crave Texas barbecue at all since I'm a huge Seafood lover, if anything I crave Maine lobster tails and sea scallops and snow crab legs. I was in Texas twice didn't even think about barbecue but went to a great Texas Steakhouse and had a fantastic steak. Sometimes I crave a good Philly cheesesteak😂

I’m from Texas, but lived in PA for a couple years. Bbq, and specifically Terry Blacks, and one other were the restaurants I missed most. I lived about 30 minutes from Philly. There was amazing food, and some of the best steaks I’ve ever had. I still randomly think about Barclay Prime, and Urban Farmer, but man, I missed bbq so much.
I highly suggest a trip to Austin. It is such a cool city. So much to see, so much to do, and so much to eat.

@@jeffhampton2767 Maine lobster!! Oh wow. My best friend had family Vinalhaven, ME and she spent all her summers there, growing up, and even after she married, they went every year while their boys were still at home as they were a boating family. And of course, the family began to die out, those that were left on the island. Last time she was there was to settle her uncle's estate, at least 20 years ago. But she told me before I'd ever gone to Maine, that she absolutely will not eat lobster, especially, but really, any seafood, away from Maine. After having spent a week up there with my husband several years ago, I'm in full agreement. It's just so much better - like a different thing all together, eating lobster on the coast of Maine. My husband has never been more adventurous than a piece of haddock, but in Bar Harbor I was going bananas over a lobster roll and he had to try it. He was convinced!
BTW, I'm near Williamsport but over the years have spent a good bit of time in Philadelphia. We have our own cheesesteaks here and having grown up on those, a Philly cheesesteak just doesn't cut it for me. Did you know that subs in general are made in a unique, rather famous way in Williamsport? A friend lived in OK for a few years and not long before her husband's deployment there was over, they came across a sub shop (a SUB SHOP) that billed itself as making subs like they make 'em in Williamsport, PA. She said they were good. Not quite like we get here (there's a particular bakery in town that makes most of the rolls for all the sub shops in town) but good. :)

Now, do not hear me casting aspersions on people’s sweet cornbread. But I have to tell you about my mama and my great aunt who grew up out in the country in Tennessee and was an amazing cook!! She taught my mama all she knew about cooking and they both LOOKED DOWN on people who put sugar in cornbread!! lol “Sugar in cornbread is CAKE! Cornbread is supposed to suck 90% of the moisture OUT of your body when you bite into it!” That’s what they would say lol. I happen to LOVE cornbread “cake”. But it is a HUGE debate in America, whether or not to put sugar in cornbread!!

Cornbread with no sugar and cooked in a hot cast iron pan to get the crust. My mother and grandmother would sometimes have cornbread for dinner. Crumble it into a glass and put milk over it. One would use sweet milk and the other buttermilk. And if you wanted sugar on cornbread heat up a slice, butter it, and sprinkle sugar over the butter. Voila... dessert.

Born in Texas (1956), reared in Louisiana...never had sugar in cornbread until I was an adult and started to make my own. I do add 2 teaspoons but it isn't sweet so much as it seems to cut the slight bitterness of the cornmeal. In my experience, the rougher and more small-batch ground the cornmeal, the more sugar can be added without making it taste like cake. "Lambs" cornmeal out of Texas is an excellent cornmeal.

Born and raised and STILL living in Texas 49 years later... When I make cornbread in a pan, I add sugar... Maybe 1/3 of a cup. I don't want it like cake, but sweeter than hard tack, for sure. EXCEPT when I make johnny cakes (pancakes made from cornbread dough), I don't add any sugar at all. Just plenty of butter.

But again, I am a snob.
It isn't what it is hyped to be. Just a solid 8 across most of the board. Turkey is real good. Sausage is real good.
A lot of BBQ is also how long you allow the meat to sit cut up. The longer it sits, the worse it is.
