  • Are you confused at the meat counter when you want to buy pork for a stir-fry or Chinese BBQ pork (char siu--one of our most popular recipes)? We get questions all the time about what cuts of pork are best for Chinese cooking and which cuts make sense for different dishes.
    My quickest answer is: pork shoulder--specifically, the picnic shoulder. This humble, large cut of meat holds a wealth of diverse cuts perfect for grilling/roasting, stewing/braising, soup/congee, stir-fry, and ground meat.     Got here looking for what cut to use for Char Siu and found it very interesting. Thanks. I have to admit that I liked the photos better than the video because I got to see more of what you see when you cut it, rather than a 'face-on' picture. Would like it even more if the vid was taken from overhead. I think the more I see from your perspective, the easier it is to learn. Thank you again for your video Very helpful.

    Thank you for this demonstration. I usually see the whole joint roasted, like in pulled pork, or a lot of supermarkets cut it into chops or steaks. I am chasing my goal for homemade char siu because there are no Chinese BBQs near me. So this video has bee invaluable to me.
    I think I remember a similar technique of "seam butchery" was once common practice in the UK.

    It often was difficult to hear what you were saying, I had my computer all the way up to !00% as well as the video volume up as well. I don't have this problem with other sites. I couldn't tell what the different pieces were used for.

    A question. Is this the pork shoulder or the ham? Didn't see the shoulder blade I have removed from the shoulder and the bones appear to be the ones I have cut out of the ham. Don't want to criticize, but do like honestly in what I watch. I could be wrong in but I didn't see the shoulder blade. With best intentions only.

      Hi there! This is the picnic shoulder, which is the lower part of the shoulder. The cut with the shoulder blade bone you're talking about is pork "butt," which is the upper part of the shoulder! The ham is the hind leg.
