I'm sorry, I'm not understanding the advantage of using this over a standard 35mm euro hinge. Is it just the look? Can someone please explain?

Used for applications like a drop down Face for pullout keyboard tray drawer. Has just enough holding power to keep the face in place and allow it to be dropped down to access the keyboard / mouse pad without the drawer face being in the way.

I'm not sure if that's been made on this one, but similar animations of 3D models can be done in Autodesk Fusion 360 (free on education/hobby license)
