I am not a master of the differences between “true” Baroque interpretation of this music and less historically-informed performances, but I love the horn-like sound of the Baroque oboe.
Check out Jordi Savall. All of the musicians in both his chamber group, Hesperian XXI, and his orchestra, Le Concert de Nations, play on period instruments, including their recording of al Beethoven's symphonies. (Their treatment of the 7th is an absolute tour-de-force.).
