It started off strong in the visual department and I had high hopes, then I saw that dry puck of brown meat they were trying to pass off as pulled pork. The rest looked strong and besides that wretched attempt at pulled pork, I would have sunk into everything you got!
I have worked in several BBQ joints and I immediately paused on that pulled pork I just know its gonna be dry asf. My theory is they portion it into balls and then hot hold it. You really shouldn't hot hold BBQ unless its flying of the shelves or you do a shorter service. You also should break it up so it doesn't look so manufactured like some plastic bag of supermarket pulled pork. I bet they have a steam well of pork balls and they just plop one on a bun to order.

You could look at it and tell some of the food was dried out. There's a place here in VA called Mission BBQ that seems to do it right, like you can see the moisture come out of the meats they smoke, sauced up right, and their sides are heel kickers. So looking at that and looking at this, it's kind of a night to day difference.

It looks like they are smoking large amounts one day and then holding it and serving as ordered. Walk in dries out the meat more. Good BBQ restaurants aren’t afraid to run out of an item. They make what they believe they can sell that day and that’s it.
And this might be personal opinion but brisket needs to be sliceable and should not be falling apart like that. At the restaurant I worked at we would probably take something like that and chop and sauce it up for BBQ beef sandwiches.
If you want Texas BBQ in Connecticut, then visit Hoodoo Brown BBQ just south of Danbury on Route 7. I think Daym would LOVE the BBQ beef rib and brisket sandwich. Burgers are hit or miss. Sides are different. Fries are okay. The BBQ chicken is slamming. Tender, juicy, and full of grilled flavor.
I knew that chicken was dry from Daym first bite, and I could tell that mac and cheese was gonna be flavorless due to the amount of oil on the first reveal. And that pulled pork looked like it was sitting in the sun a couple days, they should've slapped some BBQ sauce every hour to keep it moist if they wanna serve it off of a steam table.
If I had to guess, theyre selling leftovers from the previous day. Some stuff looked really fresh, while other stuff was bone dry. Best way to kill a food business is doing this, your repeat customers will stop coming REAL fast

I recognize that pulled pork they are using . It is a dehydrated bbq pork you can buy at Costco or the Chinese market. Just add water and mix. That hairy texture is what gives it away .
Indeed I enjoyed this video, the pulled pork looked similar to a crab cake or mackerel patty. Keep pulled pork on the shoulder and covered until served. Time management is key for if you leave it out, it will dry out fairly quickly. Ribs doesn't need to be competition style, but need to be tender and flavorful. I would suggest either inject them with complementing flavoring. Brisket? Looks great, but what may be fighting it's taste are either it's battling flavor combinations or it's injection may be fighting it's rub, when in doubt keep it simple with SPG, with a mustard binder.
Bruh as a Chicagoan who is used to eating some fire BBQ that pulled pork was pitiful , this was like the 2nd review i watched where they gave you a hockey puck pulled pork lol. If you ever come down here Dayum you gotta hit up this spot called Smoque's BBQ. They was featured on chef guys big bite back in the early 2000s and i gotta say they still taste amazing and the same till this day.
Thanks for the review. What I have discovered when eating BBQ at most restaurants is they seldom live up to my personal expectations. I think the reason is most of these places are not allowed to use grills and cookers like we use at home so they roast their meats in the oven and then burn the outside under heat lamps throwing a little liquid smoke in the mix. If you are a connoisseur of barbecue, and you cook your own, I think you will always be disappointed in restaurant stuff.
First impression for "appearance", everything, but the pulled pork sandwich, looked quite appealing. The wings, fries, ribs and brisket all looked nice.
The key to a BBQ restaurant is the parking lot. My trips around SC I searched for crowded parking at BBQ joints. If a BBQ restaurant has a lot of empty parking, the food sucks. Small restaurants with a lot of cars signaled super BBQ.

Bruh as a Chicagoan who is used to eating some fire BBQ that pulled pork was pitiful , this was like the 2nd review i watched where they gave you a hockey puck pulled pork lol. If you ever come down here Dayum you gotta hit up this spot called Smoque's BBQ. They was featured on chef guys big bite back in the early 2000s and i gotta say they still taste amazing and the same till this day.

Thanks for the review. What I have discovered when eating BBQ at most restaurants is they seldom live up to my personal expectations. I think the reason is most of these places are not allowed to use grills and cookers like we use at home so they roast their meats in the oven and then burn the outside under heat lamps throwing a little liquid smoke in the mix. If you are a connoisseur of barbecue, and you cook your own, I think you will always be disappointed in restaurant stuff.
The rollercoaster ride of disappointment is CRAZY 😂
First impression for "appearance", everything, but the pulled pork sandwich, looked quite appealing. The wings, fries, ribs and brisket all looked nice.

The key to a BBQ restaurant is the parking lot. My trips around SC I searched for crowded parking at BBQ joints. If a BBQ restaurant has a lot of empty parking, the food sucks. Small restaurants with a lot of cars signaled super BBQ.
