I love old saw mills! My mother's family owned sawmills. Unfortunately, our state government has stopped all native hardwood logging basically killing all small timber towns.
Lowest I’ve ever seen wood in the south was 9% in the winter 😆 I didn’t know 1% was possible
If you want custom moldings or flooring, try Northwest Millwork near Salem and Silverton. Excellent people and fantastic end product. They have a great library of profiles, and if they don't currently have the cutters, they make them to your specs. Also, their molders are 5 head. They can get very intricate.
And no, I don't own the place. I used to work there. They're very reasonable and excellent quality.

The old car was gold as well. A Trumph Spitfire mark IV. It was built in Speke a district of Liverpool, the factory is gone and is now an Asda superstore which used to be owned by Walmart.

8-10% moisture is right for dried wood, normally 15-18% is where you find it. There was a mill like this near my house, they cut and made cedar shakes for roofing. They were buring the waste in a wigwam stack, got loose and nearly burned the whole neighborhood down. You'd never know it was ever there when passing that place today. Large mills drove these out of business.

Timber looks stunning, you couldn’t get anything like that in the Uk for less than an arm and leg! I don’t know how the climate reacts differently in America but if I put timber that fry into a Uk house it’d expand as it acclimates to the natural moisture content of the house

What are your plans for stain/finish/varnish for the cabin? This is some beautiful wood. It would look great with some tung oil, and maybe a poly coat on the outside.
When checking for moisture, you should stick the face because the moisture leaves the end of the board quicker.

Ive heard that 7% is considered the least amount
He was reading from the end grains of the boards, they are always drier there! The humidity hasn't been that high enough to be reabsorbed into it yet! I used to be a sawyer for a hardwood mill in Minnesota! We had to paint seal the ends of the logs to help stop the end cracking of the boards!
Are you sure the moisture meter was accurate? Seems crazy low, especially when he guessed 10%. Not ragging on you just genuinely curious!!
