Just that mahogany color, the bark is set, etc. I cook everything to color. Ribs, brisket, pork, etc. cook to color, cook to tenderness. People make bbq harder than it is.
Looks great. I'm putting 1 on today. Used to always make pork belly burnt ends, til an old Hispanic guy at work gave me a smoked pork belly taco. It makes an amazing taco.
@AshKickinBBQ yes sir, I recommend it for sure. But no sweet rub for tacos. Chipotle, abode rubs with no sugar are great, something with a little kick. Corn tortillas, thin sliced avocado, Shredded purple cabbage, cotija crumbled cheese, cilantro, and a good green or red salsa. But hey man, make it your own. This is from SE Texas. Think we got the patent on tacos in this area lol.
I made 3 of them and vacuumed sealed 2. It’s delicious and the smoke the Lone Star puts on them is great. 😊
