Unfortunately a lot of people confuse the 2 and a lot of bakeries will use them as substitutes. Some will sell purple sweet potatoes labeled as ube. Ube has white flesh and a deep purple sap that stains your skin for a day or 2 when handled without gloves. It has a barky and stringy skin similar to taro but instead of pink it will show some deep purples. Real ube is actually not as abundant since its only harvest during a specific season unlike sweet potatoes that can be grown and harvested all year round. Ube is actually not sweet and very starchy but it has a unique flavor profile that most describe as nutty and a hint if vanilla.

Ube can be used like any regular root crop to savory dishes like a potato. Although it is popularly used too as a dessert like ube halaya, as jam, for bread. Please dont present it one dimensionally just for sweets. Hay!
