Run it twice just reduces variance. If you ran it for the remaining cards in the deck, everyone would get what they deserve. There's no downside if you're getting it in good.
It’s crazy how much effort NLHE cash game grinders put in to end up with such small winrates when they could be crushing other poker formats for $2-300k a year pretty easily
