3D Printer Makes the Perfect Chocolate Layer

- 3D printing chocolate has been a distant dream for ages, but finally the future is here. No but really, it's a neat concept. It works by a stepper motorrotating 2 gears that generates pressure to move the liquid chocolate down through a nozzle. You place a bunch of chocolate inside the tank and let it melt by a heating element connected to the hotend of the 3D printer.

This video was recorded during a 6 month period, obviously I did have a lot of problems with the chocolate extruder. However, I do want to say that if you think this is a really interesting subject and would like to buy an extruder kit, keep in mind that most chocolates probably will not work. The chocolate I found that worked the best was with the two main ingredients being sugar and vegetable fat. The chocolate I tested was lacking cacao which I think was the main reason it worked much better than the previous tested chocolates.

"vegetable fat chocolate" is called "cooking chocolate" or "chocolate coating".
It is used in making cakes and coating for candy because vegetable fat can solidify without tempering.
Basically, you can melt it, and it will solidify with no issues.
if you melt normal chocolate, when it solidifies it will not be the same.
That is why if you leave chocolate in the sun, it will be soft and waxy even after it solidifies.
To make chocolate with cocoa butter hard and snappy factories need to do a tricky and quite difficult tempering process.
I am surprised that you had to buy cooking chocolate online. You can get it in every store here in Balkans and they are extremely cheap.
I guess there is a huge difference in standards of living since you never even heard of it.
As a studying baker in Sweden it’s definitely something you can buy here in stores, or at least a similar product. He even buys it in this video. This uses cocoa butter though so it still doesn’t work as well, it can’t legally be called chocolate so they just call it something like “dark decor”. I wouldn’t expect someone who isn’t particularly into food or chocolate to know this though as it really isn’t common here, even in bakeries or cakemaking.

By the time he got to that stage, he was probably sick of the stuff.

First off, let me say that I greatly admire your patience. Secondly, may I suggest sourcing chocolate that has coconut oil as the main fat, as it melts at only 24C. That *should* mean you only need to cool the new layers by ~5-8C to get them solid, though such a low melting point brings its own problems. You can make your own chocolate using coconut oil, honey, and cocoa, which might be something for you to try. Another option in the other direction would be to add (edible) paraffin wax to regular chocolate. This melts at 46-64C and is often added to help chocolate not melt so easily in your hands. Another option that someone mentioned was to use a *cooling* enclosure, which might work well. Hope this helps!

I think it makes a lot more sense to print molds for chocolate than print the chocolate itself, but if you really want to print the chocolate directly I think you need some kind of really good cooling solution

so print first layer, let it cool, then print the next...
yeah it would take a longer time to print, but the result would be better...
you might also wanna add a little vegetable oil to the melted chokolatte to keep it from clogging up...

If you insulate your heating barrel and extruder you could print in a controlled lower temperature. That would allow you to maintain your molten chocolate while also providing the environment to solidify the structure. Though this would cause your chocolate to possibly not be tempered.

FYI, cura has an option under cooling I think for minimum time per layer. So if a layer prints in under 10 seconds, the extruder will go to the side and wait for the time to hit 10 seconds, thereby allowing the layer(or chocolate) to cool and solidify.
the bed that you have to place in a cold bed you use the peltier screens to make the cold bed adi the chocolate cools faster and keeps your shape greetings from Colombia ...
Use chocolate with a teaspoon of vegetable oil to avoid it clogging, same thing you do with chocolate fountains

Moe A. tbf I think it also takes quite long to actually print the chocolate. Hence, the time lapses. So, it’s got potential, but definitely isn’t feasible for weddings in its current state.
Add a vortex tube/cold gun to it. Then you can really cool it fast enough. Also put some peltier coolers on the bed.
It will be neat to see if you can pull off much better quality, in more chocolates.
I know this is way late, but you might want to think about adjusting minimum layer time to something very high, to allow the previous layer to cool down. Make sure the extruder is set to move away from the model during this time.
For this project he gained 5kg of weight because of all the fails he had to eat

What if you made a "frozen bed" as well as fan cooling?
Maybe he could use a Peltier element and some copper tubing to circulate cool liquid under the bed. A little bit like a PC water cooler.
I was also thinking he could use cooled air in his cooling fan, maybe run it from a small refrigerator unit or something
Besides making the bed cool using a peltier element as other have suggested he could also use a peltier element and duct it to cool the chocolate as it comes out.

The reason why the chocolate with the main ingredients sugar and cocoa butter (natural chocolate) fails is because you need to temper it to avoid melty chocolates.
