Estrelina, If you use only the Egg Whites your Prawn Rissois will get a nice crispy outer crust but If you don't want it too crispy you can use the whole egg.🙂
First time when i ate rissois the filling was not so overpowering it was just pefectly made how we make simple dish of shrimp but now i see too many cooks on line and they add this and that which i think is not necessary,anyway i make this nice and simple.

It could be due to the fact that they were not sealed properly together 🙂

Maybe you added too much filling due to which it's opening up.

Maria, The original Portuguese recipe does include Flour & Cheese. We have done the same. Do try it out.🙂
