The peanut butter noodle recipe is sooooo good and so easy to make! I just made it for my family a few days ago and my mother is already asking me to come over and make it for her as well. (And it is amazing for hangovers, too!)
Side note: In Canada Mirin doesn't contain alcohol since they will not be able to sell it at the grocery store otherwise. That is great if you have children or cannot consume alcohol.
My even lazier version of Aaron's lazy version of the peanut butter noodles involves using crunchy peanut butter (no need to grind peanuts separately) and just grating the garlic (no need to peel). I also toss my dripping noodles into a bowl with the sauce mixture (no need to add pasta water separately). Apple also works in place of cucumber!
When in doubt, add green onion! I also love it...and garlic. They are two of my favorite flavors. These recipes look amazing and I can't wait to try them! I just ordered your book too :)

I really like chili garlic sauce. To make my peanut sauce, I just add peanut butter butter to my chili garlic sauce. It'd not homemade but it is delicious

Aaron - I love your recipes and I totally agree: more green onion = more delicious. But how do you successfully clean green onions to remove all the dirt inside the tubes? Our UK green onions are almost impossible to clean completely without splitting them open at the branch and cleaning well inside - can you suggest an easier way?

They're junghwa myeon (중화면) or jjajangmyeon noodles. You can usually find them in the frozen section of Korean grocery stores. If you can't find them, no worries! Any Asian wheat noodles or even spaghetti will work just fine in this dish!
I have a kiddo who can barely take spicy of any kind. Do you have any suggestions for when chili oil is in the ingredient list? (Other than just not adding?)
Just wanted to say that there are people with a gene that makes cilantro (and jasmine, anything with aldehydes) taste like soap. I’ve been told cilantro has a grassy flavor, but I have to take their word for it because all I can taste is dish soap. I wish it was different, I can eat foods either cilantro but the flavor is very distracting and takes away from any dish I eat.
I respect this guy for replacing cilantro with cucumber. They don't really seem like substitutes to me, but it is still a good idea to replace cilantro with anything. In fact, any youtube chef who posts recipes with cilantro ought to be banned from youtube.
Actually when I tried the peanut butter recipe, the chili oil did nothing at all. I even added more like 2tbsp and it was still not spicy. could be the peanut butter.
